Quick...a help...baked Green Chile Rice ??

The recipe is super simple..

1 c rice

2 c chicken broth

4 oz can green chiles

1 sm onion, diced

1/3 c fresh cilantro

1 t oregano

1/2 t salt

1/2 t cumin

3 green onions.

Mix together and pour into a greased 9x13. Bake in the oven for 1 hour or until the rice is done at 350F.

My question,,,do I cover? doesn't say a word about covering??

    I think I would, at least until some of the moisture is absorbed by the rice. I have a similar recipe -- I'll check it and get back if it says otherwise. I'm often left with that question when it isn't specified.

    Yep -- my recipe says to cover tightly at 350 for 30 minutes. The rice and broth ratio are the same, but it's started on the stove. You might not need to bake it that long. Just keep any eye on it.

    It's not covered..I'll check it in a few minutes and maybe
    "steam" it out of the oven tightly covered.

    It was a hit! barely any left.

    It had been in the oven about 40 minutes and all the liquid was gone, so I fluffed it, tasted to check for doneness, pretty close...took it out, covered it foil and let it set on top of the stove.

    I served it with a Refried Bean Bake, grilled ribeyes and chicken thighs, Baked Potato Salad and Asian inspired red slaw.
