I make an ice cream cake that I found a recipe for in BHG several years ago. You use a springform pan, line the bottom and sides with wax or parchment paper. Then make a crust out of coarsely chopped oreos and some milk. Buy ice cream sandwiches, and working in amounts of 4 at a time (while the others remain in the freezer, cut them in quarters and line the pan with the quarters standing up and down. I have a picture somewhere that I can email you for a better description. Freeze that for a while, till firm, while partially thawing a pint of ice cream (this recipe uses three different types). Once the ice cream is soft enough, spread it in a layer on top of the frozen cookie crust. Freeze again, while partially thawing another pint. Repeat procedure. Then do the same thing again, with the final pint. Freeze again, then top with cool whip. Decorate with broken oreo cookies (or whatever type is your preference). Freeze till firm, preferably overnight. I've made this cake three times...always a winner.

For Easter, pastel colored icecreams would be ideal, and maybe a lemon cookie crust. There's also pink ice cream sandwiches that might be fun.

Well....you know me....wing it linda! LOL!
I make a 1 layer cake or brownies. I use a 9 inch cake pan to bake it. Then coincidentally, I have a stainless bowl which is 9 inches in diameter....and I fill that with various kinds of ice cream....softening one flavor at a time. I start with vanilla and lien the bowl with that and refreeze....then perhaps strawberry or pistachio ( Tee hee!) and finally chocolate. Freeze each layer as I go, then dip the bowl briefly into hot water invert onto the cake and either frost with whipped cream and refreeze or frost with merangue and bake...as in alaska.
Or another thing is to bake a layer ( this always results in cupcakes with the leftover batter!) in my largest spring form pan....cool it and split it into 3 layers...put it back into the now clean pan and add a layer of softened icecream, then the other cake layer and finally more icecream and end with cake.
Re-freeze, remove from the pan and frost with sweetened whipped cream.....or simply serve fudge sauce with the icecream.
You can vary this with things like nuts between the layers ( pistachios, perhaps) or sliced fruit that freezes well, or candied fruit etc.

Tis isn't a traditional ice cream cake, but I can absolutely vouch for it being delish! Of course, you could sub real whipped cream for the cool whip, dulce de leche for the caramel sauce, ganache for the chocolate syrup, etc... but it is pretty darn good the way it is written! I've made it both with and whout the peanuts - I prefer without, DH prefers with, so it is a toss up!

Ice Cream Sandwich Cake

1 foil lasagna pan - the deep kind
2 boxes of ice cream sandwiches - usually 12 in a box
(store brand works just fine) and you'll have a few
leftover to stash back in the freezer.
1 12 oz. carton Cool Whip, thawed
1 jar each of Hot Fudge and Caramel ice cream topping
3/4 cup salted peanuts

Cut one ice cream sandwich in half. Place one whole and one half sandwich along the short side of the ungreased pan. Arrange more sandwiches in the opposite direction in the pan; cut to fit as needed. Spread half the Cool Whip on these. Spoon or pour Caramel topping (I use about 1/2 the jar) over the Cool Whip. Sprinkle with half the peanuts. Repeat layers with more ice cream sandwiches, Cool Whip, Hot Fudge topping (nuke 15 seconds for easier
consistency) and the rest of the peanuts. Cover tightly with foil and freeze. Remove from freezer 15 minutes before serving.

Hi Nancy! Long time no see!! Yes, please email me the pix & recipe. Sounds like something I can handle & the kids will love it. They like Oreos over my homemade cookies...the darn little buggers! :) I really don't want to bake anything so this sounds perfect.

Gosh, Alexa, that sounds good also. I love caramel. But, I won't be eating it. Drats. This ice cream cake thing is sounding more & more like a great idea. I'm just not in the mood to bake. Between all of these suggestions I'll create something festive.

I read a recipe for one once. I don't remember the specifics, but it involved making one layer of cake, then taking a block of ice cream (like you'd get in a rectangular box/container) and essentially cutting that in half horizontally. line up the ice cream pieces side by side and you have one square of ice cream half the height of the original box, then you could put the cake on top and ice it. something along those lines, but you get the idea. i suppose you could cut it into a circle. but it only requires cutting the ice cream layer to be whatever shape you want, no scooping and so on.

A friend of mine made an ice cream pie one time and I really was so good.

She just bought a pre-made graham cracker crust and filled it with softened strawberry ice cream. Then she put cool whip on top and froze the whole thing. Sounds so simple but it was so good!

My favorite when I was a kid was Grandma's jelly roll cake recipe, spread with softened cherry ice cream and rolled up and put back into the freezer. It got sliced just like a jelly roll. the girls like chocolate cake with mint chocolate chip ice cream, I like the cake I use for pumpkin roll with butter pecan.

Just wanted to add that although I don't use a recipe, I like to put a meringue layer or two in an ice cream cake - I like the textural contrast. I usually build the cakes in a spring form pan, so just use that to trace a circle for the meringue. I make them about 1'' thick.
