What To Do With Ham Stock?

Courtesy of the honey-baked ham that a kind friend brought over (and, better yet, left behind) for Easter brunch, I now have some ham stock. Really yummy - tastes like liquid ham.

But I now realize that I don't know what to make with ham stock - besides split pea soup, for which I'm just not in the mood.

If you had two quarts of ''essence de Wilbur'', what would you do with it? Make some (non-pea) soup? Braise some pork chops? Add white wine, shallots, and reduce, reduce, reduce to a demi-Wilbur?

Looking for ideas. Thanks!
