While making Ann's Peanut Butter and Chocolate Tarts last week I found that there was a significant difference in the outcome depending on the material of the mini muffin tins I used: In the dark grey non-stick ones (Baker's Secret or some other inexpensive supermarket brand) the edges came out a little darker than I would have liked (some almost burnt) by the time the top looked ready. In the thin aluminum pans first off the tarts rose a LOT more, and secondly almost all of them broke when I tried to get them out of the tin, even though I had buttered them well. BUT, those that did de-pam without breaking had a lighter edge to them which I preferred.

Is there a material or brand of choice?
