I CAN peel an egg, well actually 6!

After all the advice I got when I started this thread, I tried a combination of things and got 6 perfectly peeled eggs.

I put about an inch of water in the bottom of the pressure cooker, put the rack and steamer basket in and added 6 eggs. Brought to high pressure, cooked for 5 1/2 minutes, brought pressure down naturally, emptied the pot, put the eggs back in the dry hot pot and shook the pot vigorously till the eggs were cracked all over. Some shell did come off during this process. I then put the cracked eggs in an icebath for 10 minutes. The shells peeled off in one piece stuck to the membrane and didn't take a single spot of white with.

Thanks every one. We eat a lot of HB eggs. This will be my go to method from now on.

The word is "Hugelkultur". That's what my mom used to practice, on a small scale. When preparing a vegetable bed, she would strip the area of all the top vegetation - weeds, ferns, shrubs, saplings. She then strips the layer of top soil and put this aside. Next she would dig a trench in the ground - orientated north-south lengthwise. How deep this trench is depends on how difficult the soil is to work on. In this trench, she would throw in all the woody twigs, small trunks, and rotten debris. Next, she would cover this with the weeds/ferns/saplings that she collected from clearing the area. She compacts this down with a "hoe". She uses the top soil she had previously set aside to complete the final layer. The final result is a long mound on which she would grow her spring onions, pak choi, chilli, etc. The mound usually ends up about 20 feet long, about 3-4 feet wide, and approximately 2 feet high. It often ends up not looking all that pretty - it would be crooked, and the height and width would vary. But, boy didn't it produce good crops!! (She would grow sun/heat loving crops n the west side of the mound, and the less sun tolerant types on the east side.). She uses fern leaves to mulch the soil. A heavy tropical down pour would easily wash away the top layer of good soil if left unmulched. I did not know, until recently, that this technique of vegetable growing that my mom used to practise more than 40 years ago actually has a more fancy name "Hugelkultur", done on a much larger scale. Now-a-days, in addition to maintaining a compose bin, I collect the larger chunks of organic waste by setting them aside in a pile through the growing season. In the winter, I trench the beds, throw in all the organic materials, together with any kitchen wastes that may be sitting around, and build up my "Hugelkultur" bed - albeit on a small scale.

Peter, I have an egg cooker too, I found it in the tool shed after Dad passed away and rescued it before it got broken. I haven't used it yet, I'm afraid I'll burn the house down. You can see that the element is rusty... Anyway, I didn't' jinx myself. I boiled 2 dozen eggs, all less than a week old. I put them in a big pan, covered them with cold water: Turned on the heat and brought the water to a boil, then turned the burner off and let the eggs sit for 15 minutes. I don't usually let them sit that long, but I got busy making ganache for the Boston Cream Pie, and I have my priorities, LOL, especially where chocolate is involved. I drained off the hot water and ran cold water over the eggs until they were cool enough to handle, but I had a couple of other projects, so I put them in a bowl and stuck them in my second refrigerator, aka the garage. They stayed there overnight. Sunday morning I peeled the eggs for potato salad and devilled eggs. Even after using fresh eggs, overcooking them AND letting them sit overnight, this is what I got: Was it a fluke? Nope, I did it again: I did have one "egg failure", because I dropped one of the eggs on the floor and it broke. I let Cooper have that one, although I could have peeled it and used it for potato salad, I suppose. I roll the eggs around on the counter to crack the shell all over. You can see the membrane still intact on the inside of the shell, that's how I pull the shell off in big pieces. Oh, and the air pocket is usually at the larger end of the egg, so I start peeling there, to be certain I can get the membrane off along with the shell, instead of little specks of shell. That probably doesn't help at all, but using the "roll and crack" method I seldom have trouble peeling eggs. Annie

Most places say "hard boiled" is a misnomer, they should be "hard cooked" by a simmer. If I'm cooking eggs only, I bring them up to the boil and shut off the heat and let them simmer in the hot water. My corning top stove holds a lot of heat so I regulate it if I need to. I've seen different times stated and don't recall for sure the exact times I've used. Haven't hard cooked eggs for a while. I don't get truly fresh eggs very often so I don't have trouble peeling them. I try to crack the egg once, preferably without a lot of little pieces, then get a hold of the shell and slowly pull somewhat parallel to the egg and you'll feel it release. I can often get the shell of in about 3-4 large pieces and none of the little flakes of shell all over it. Quick and easy. BTW, for potato salad, I wash the eggs well, then cook them with the potatoes and save energy. The eggs normally cook quicker so you take them out before the taters are done. They'll be peeled by the time the taters are done. And I've read that it's always best to start both eggs and potatoes in cold water and let it heat on the stove rather than start in hot water. Potatoes won't essentially "sear" and the eggs won't crack as much, according to the claims. I can't verify it either way except to say it works fine for me. I tried hard cooking eggs in the convection oven once. The manual says it's perfect and I thought it'd be easy but I overcooked them and I mean WAAAAAAY overcooked them! Haven't tried it since. But would like to try sometime.

I didn't read through all the other answers, so this may be a repeat. I am usually pretty successful, although do have the occasional bothersome egg. I bring the eggs to a boil, turn off the heat, cover and let set for 20 to 22 minutes, then immediately dump the eggs in the sink, running cold water on them, roll them around to crack thoroughly, one at a time, and peel under the cold running water. Lift a fingernail under the shell and start peeling. Many times the peel will almost come off in one piece.

Hooray, I knew you could find a way that works for you.

I've tried several "fool proof" methods but somehow it seems that one way works for one person and another way for someone else.

I was sure, though, that you could do it, somehow.

2. Ã¢ÂÂBrought to high pressure, cooked for 5 1/2 minutes, Ã¢ÂÂ -- As pressure builds up, interior temperature rises above boiling point from 212F to 250 F.

3. Ã¢ÂÂbrought pressure down naturally, Ã¢ÂÂ - Since the eggsÃ¢ÂÂ temperature is at 250 F, water in eggs will continue to be boil away until they reach below 212F. The eggs will be dryer and smaller than if you boil them at room temperature. Also the egg white will be firmer.

4. Ã¢ÂÂemptied the pot, put the eggs back in the dry hot pot and shook the pot vigorously till the eggs were cracked all over.Ã¢ÂÂ - This also help delaminate the membrane from the white.
5. Ã¢ÂÂ-----. I then put the cracked eggs in an icebath for 10 minutes. The shells peeled off in one piece stuck to the membrane and didn't take a single spot of white with.Ã¢ÂÂ - The smaller egg has more air space, and air shrinks in ice cold water, sucking in water along the way, and the layer of water between the membrane and egg white serves as lubricant which makes the peeling very easy.

dcarch, I just made eggs a few days ago...did the steaming but decided to just let the eggs cool room temp and found that they DID actually peel as well as if you put them in the ice water. I did notice that if I start the cracking at the wide end, it's easiest to peel. I have yet to try the cracking THEN ice water method. I'm not having any problems peeling the eggs so I really wanted to avoid the hassle of having to get out ice just to peel eggs. Happy to have found that room temp cooling worked fine!
