ooohoooohhhh ohhhh THANKS! for those links! I've been reusing some hamburger packages that I love because they are small and sturdy, but they don't hold much when I'm really doing alot of chopping and cleaning...And soon the fruity flies will be inside instead of outside...

Linda, I compost heavily here and a counter top was too small I found. I bought a small "step on to open lid" can with an insert pail that 2x a week we dump either directly into the garden or into the big compost bins outside. I have never had bugs bother it and no smell either. Just remember to add a bit of "brown" matter, like a few sheets of newspaper to balance out the greens.

No meats or fats either can go in. Egg shells are good but breakdown slowly, so crush those.

If you go direct into the beds, just spade a hole, dump and cover.

It's odd how most of my scraps have been "recycled" into chicken feed, my "girls" love all the veggie and fruit trimmings, the old bread, they even love meat scraps. C'mon, they're carnivores, remember, they eat worms and bugs when they can catch them. No egg shells, I don't want to teach them to eat eggs!

I use a 5 quart plastic ice cream bucket with a lid. Actually, two of them, one for chicken scraps and one for things like coffee grounds and potato peels, one of the few things the "girls" don't really like very much. That copper one is really pretty, though...

I have that EXACT compost bucket! It's wonderful and no fruit flies! Gardner's Supply is a wonderful online store with great customer service; I've purchased many things from there. Even things I've had for months they will accept as a return with no questions. Highly recommended.

DH just brings the stuff to our outside composte the same day. We used to have a pail and would empty it when full, but I found that it smelled and couldn't stand it. DH is outside a lot so putting it in the big composte daily isn't that much trouble for him! LOL

Peppi, the "step-can" is a really good idea, but unfortunately, have no place to put one of those. Even a bucket under the counter would be a tough one to find space for in my tiny kitchen!

I can easily empty daily, so don't need anything too large. Someone mentioned to me that this pail is too tall to fit under the cabinets. At 9-12" tall that doesn't seem too bad, but I'll have to measure when I get home.

I use an old pail from wall putty. It's very sturdy. About the size of a coffee can.
It sits just out of my kitchen and in my laundry room (this is three steps or so from my prep area and 12 inches from the coffee pot which is mostly what goes in there.

Like Annie, The Girls get the veggies scraps unless it's late, rainy, freezing cold or there's such a tiny amount it isn't worth starting a fight over (for the chickens).

When I prep veggies, I just grab a big bowl (usually one that is "dirty, but rinsed well") and toss the scraps into that, then take it out to the chickens.

Works for me.

I don't have an inside container, and I don't have a compost heap.

In the winter I just put my scraps to the side as I make dinner. After dinner, I take a walk in the yard and toss them onto one of the garden beds. Anything that doesn't get nibbled by adventurous rabbits breaks down over the winter. The only thing recognizable in the spring are pumpkin stems from our halloween jack-o-lanterns! Funny though, the "skins" of the pumpkins remained from a few this year, complete with the cut out faces LOL. But the pulp was completely gone. They have been dug under for the spring now, but the time I plant I won't find a trace of them.

In the spring and summer, after dinner I take a walk outside to look at the garden and grab a small spade. Make a hole in one of the beds, toss the scraps in, then cover. Or you can make a shallow trench along the side of a bed, and as you fill it cover it. I have raised beds so it is easier to do the hole thing - I find an empty spot between tomato plants or whatever.

Nothing sits in the house to gather fruit flies. But then again, I only do this for fruit and veggie scraps, coffee grounds, tea bags, that sort of thing. No meat, no milk, no fats, and no breadstuffs (although cooked grains might make their way there).

I use a large plastic folgers coffee container, blends right in!

I use a 1-gallon white plastic tub I originally got agave nectar in. It has a sturdy, snap-on lid. I also have a small compost tumbler and I learned a tip from a comments section about them I've used. If you line your compost container with a brown paper lunch bag and place your scraps inside the bag, you'll be adding the right amount wet and dry compost by using the paper bag.

Another tip. I cut off the top of the bag about the same length as the bottom of the bag. Place the cut portion in the bottom of the bag and that piece will keep stuff from soaking through the bottom of the bag. Keeps it from breaking open when you pick it up. The bag also keeps the inside of the container much cleaner.

I got a copy of Gardener's Supply Company catalog yesterday, and they had a nice variety of countertop compost containers.

I have always used a plastic mixing bowl and kept it on one side of the sink. It holds about 10 cups of peelings, coffee grounds and non meat scraps, including fish bones and shrimp shells. As the contents are dumped once or twice a day into the composter it stays odorless, but I do slide a plate on top to keep out insects.

I just keep a SS bowl handy on the countertop when I'm prepping then walk it out to the compost.

I'll vouch for Gardener's Supply Co. They're located in Vermont & I've been to their store many times. They are a New England landmark similar to LL Bean. Good company with good customer service. Also knowleagable & helpful folks.

For winter time, I just use a big plastic bowl to collect things for a day or two before it goes out to the compost pile in the vegetable garden. In the summertime, when fruit flies become active, I bought a small stainless steel stockpot with a lid.
