I would fix whatever you know your mom loves to eat. You can make it a good old-fashioned barbeque. With those vegetarians, you can also have fun fixing tons of side salads like black bean (I'll look for my recipe if you need one-it has yellow, red, green peppers, so very colorful), potato salad, macaroni salad, etc., as well as all the old BBQ favorites like deviled eggs and corn. Grilled chicken is always good and grilled veggies are yummy. I used to fix whole onions on the grill with butter and garlic wrapped in foil and heated on the coals. Of course, I guess most people use gas now, so that wouldn't quite work. Oh and definitely homemade ice cream!

Many vegetarians in our family too. Would you consider tacos? We did that for my son's graduation party, and it works out really well. People who wanted chicken or beef in theirs were fine, but the vegetarians could just have rice, beans, avocado, sour cream, tomatoes, cheese, etc. And if you choose to have part of it catered like we did, you can get big pans of rice or beans for about $30 each.

Since you have a little bit of time, what would you think about making a video of people sharing their favorite memories with their mom? You could play it at the party, and I bet it would be a wonderful time for everyone...

If you have a wii, you can get pics of your family and put them on an s/card. This will go into your wii, and play on your tv. We recently did this at a large gathering, and everyone walking through the room would stop and watch it.

We're going with a taco-fest. Figured we have fresh veggies so we can use them in the meal. Making up a bit vat of taco meat, vegetarian refried beans, spanish rice and all the fixings. My sister will bring fruit for margaritas & we'll set up a couple of blenders on the deck bar. I've delegated out food & work to everyone and so far I'm getting good responses. Everyone seems excited. We've got it all planned out how to surprise her...I think she's suspecting something is up, but I have a trick for her.

I'm also going to have everyone write out their favorite memory of her, some people haven't known her all that long, and of course, my siblings and I have our memories. It'll be fun to see what peoples favorite stories about her are. Also plan to have someone video and be sure to have lots of cameras out. Heck, there may even be some dancing! My son told me that there is a local store that had plastic margarita glasses on sale, so I'm heading there this evening to get stuff. I've got tons of streamers and decor, so we're going to have fun with this.
