Best way to monitor/control 4 zones of heating & cooling?

Hi, newby and non-specialist so please excuse any reference to machinery as "thingy".

Renovation plans to add a level to existing split level home with new heating zones and expanding central air conditioning. How best to control proposed 4 zones? Assume will need a programmable thermostat for each zone? And can/should each thermostat control both heating and cooling? The heating and air conditioning are separate systems and suspect will remain so.

Current picture:

1 basic thermostat for entire central airconditioning system

1 digital thermostat in dining room for main floor and bedroom floors

1 digital thermostat to control prior addition of family room & kitchen (same level as main floor with other thermostat)

1 50 gallon hot water heater for water requirements

Radiant hot water heating with pipes embedded in ceilings built in 1953.

Planned:

keep existing furnace (new enough and big enough)

keep existing central air unit (has a big machine thingy in attic)

Add extra A/C unit to control added bedroom level (another machine thingy in attic)

Add/replace current 1953 radiant hot water heat in ceilings with baseboard units in each room.

Replace water heater with a Takagi tankless system

Zones planned:

basement, main level, 2nd level, added level
