You could plant them to use later. Or can them. Some people even dehydrate them. I have frozen mashed potatoes and they did ok.

I make some freezer hash browns. I use them for "fried potatoes" and in casserole recipes calling for hash browns.

I would love to plant them! My dh mentioned that but we didn't know if the right time, etc. I'll look it up.

I'll definitely try the mashed and twice baked! Cool idea. I did once have twice baked frozen from Omaha steaks. Didn't think of that.

Think I will do the freezer fries, too - but baked. That would be really handy to have for the kids and if they are good maybe free me from the store ones.

My first trip to Restaurant Depot and I got carried away. I was surprised they sprouted right away and I have them downstairs. Had plans to give half to my sil but not now.

Tomorrow morning will be all about the potatoes.

I would take all the sprouts off. It will take about 2 week for them to sprout again. The sprouts take nutrients and moisture out of potatoes. Place them in brown paper bags and keep in a cool dark place.

Maggie, I agree with Shirley, remove the sprouts and you'll buy a little more time.

I used to freeze lots of french fries for the girls for after school snacks, and mashed potatoes do freeze relative well, as do twice baked.

When I get buy-one-get-one-free bags of potatoes I make at least one 5# bag into freezer potatoes. When I have more than that I dehydrate them.

Freezer Mashed Potatoes

5# potatoes (peeled or washed and unpeeled - your choice)
Cook as you usually would for mashing. Avoid adding onion or garlic because the flavors can intensify during freezing.

Drain. Add 6-oz. cream cheese, 1-c. sour cream, 1/4 c. butter and mash.

I portion them into dollops using an ice cream scoop, on a parchment paper lined cookie sheet. Quick-freeze them then package them in a vacuum-sealed FoodSaver bag. I can take out however many servings I need and then vacuum-seal the bag shut again. You could also portion the potatoes into user-friendly amounts in plastic freezer containers.

Take them to a food pantry. I volunteer at one from time to time and I know they would love to get them.

Personally, I hate potatoes that have been frozen. They take on a different flavour that I don't like. I would either give them away as Jo suggests or just toss them. We eat a lot of potatoes, but I never buy more than a 10 pound bag at a time because of sprouting.

These started sprouting within a few days...friends have told me they kept theirs for several months.

I now have mashed, oven roasted, twice baked (that was fun!), and fries in the freezer. We will see how they are. totally forgot to save some for planting - duh! One of these days...

Great idea on the food pantry but I will buy a bag just for them next time I go...I wouldn't want to give them sprouted potatoes.
