Help in converting measurements from volume to weight

I have grown so spoiled by measuring by weight that when I try a recipe that gives me cups, tsps, and tbsps, I am frustrated.

I can, of course, weigh a cup of bread flour, a teaspoon of allspice, and so on, and eventually build up a reference chart.

Can anyone tell me of a reliable on line or in print source of this information? I found several, and they vary one from another by as much as 15 or 20%. I do realize that flour weights, for instance, vary due to moisture content from one to another, just as volume measurements vary according to packing down and swiping off.

But surely there are one or two BEST sources???

The one I probably use most often is on the KAF site (linked below). That's a good starting point for me. I have it printed in a cooking notebook and check it/make notes occasionally throughout the year to see how much it varies by season.

Also, now that I'm into brining meat (making ham, corned venison, etc.) I weigh the salt - who knew different brands were so different in weight.

A traditional brine is made from a ratio of 1 cup of salt to 1 gallon of water (depends on the recipe though). Most recipes are based on table salt (look at the ingredient list - if it just says "salt", it's probably based on table salt). My weights of "my salt from my pantry shelf" on "my kitchen scale" come out looking like this (which are darn close to others I've seen on the internet)

1 cup table or pickling salt = 10 ounces
1 cup Morton's Salt = 7.5 ounces
1 cup of Diamond Crystal = 5 ounces

As often as I have ordered from KAF, I NEVER saw this. I'd rather have grams, but, hey! This is pretty darn good.

Pretty well everything in composting has 'good ranges' and there are different opinions as to what these ranges are. I go with: C:N range 25:1 to 40:1 Moisture range 40% to 60% Oxygen not less than 5% (I think atmosphere is around 20%) If you are using HM (with no bedding) and leaves, I wouldn't use a lot of leaves but I'd make sure I mixed them real good. Leaves and grass I'd go 2:1 by volume as long as the leaves were finely shredded. Unshredded, I'd go more bags of leaves. Once again, mixing really helps. Some of the best stuff I've seen is that last cut of the grass in the fall with a carpet of leaves on top. That stuff gets chopped and mixed so well it's almost perfect. Add just a wee bit of moisture and boom, 150 in a day. I love those bags of fall leaves/grass. Lloyd

This site is NOT normally my "go to" site, but they have a reasonably accurate chart for converting raw produce into yields of canned or frozen finished products. As always, these are guidelines, not written in stone. I use three different ones for the produce. I have an antique hanging store scale, still accurate for the heaviest loads, and sometimes another old vintage platform scale like all old kitchens had for loads up to twenty pounds, and then my digital I bought at Aldis for ten bucks. I even have a balance scale for very small measurements I've used when I need to be very accurate. But then again, I'm a kitchen/foodie nerd. Unless you are working with strict directions when doing things where accuracy with measurements are required for safety's sake, having gigantic bowls are a better tool to gauge when you have a canner's worth of fruits/veggies done up. I've canned so many years now that I can eyeball how full my canning bowls are and hit it just about spot on when doing up straight runs of stuff. Big, crockery bowls from Nelson McCoy I bought back when they were still in production.

The value of vermicompost for Compost Tea is that it is damp and full of life. Depending upon how damp the sample of compost is it could maybe double in price for the same volume. A logical way to purchase fresh vermicompost direct person to person would be to use gallon milk jugs with the top cut off and the handle still on or even half gallon paper milk cartons. This will allow oxygen to get to the still living weebeasties. Volume instead of weight might be a more standard measure for vermicompost since water can be added or dried out vermicompost not as valuable for some uses.
