Some roses are really good at staying in a two-dimensional space - even really vigorous ones such as Mermaid and New Dawn....but MAC is, in my experience, not really one of them. It is quite wilful and will throw canes from various points and directions. But, as has been mentioned, secateurs are never far from my holster in the vicinity of MAC and even during midsummer, it is perfectly OK to be ruthless, chopping wayward canes with alacrity if they fail to stay in bounds - my son does his 3 times across the year to prevent his entire tiny front garden being overtaken. As for placing canes - well, they will grow as they grow and initially at least, the canes do have some flexion - not as much as a wichurana but still bendable so get them as low as you can and don't worry too much about placing them too closely - although with MAC, I rely more on having different lengths of canes, rather than training and bending, keeping some really quite short in order to alleviate bare legs....but that would be a bit messy on a trellis. They will, incidentally, bloom pretty much everywhere - none of that only on old wood anxiety, common to many climbers and ramblers - which is just as well, given the amount of pruning it gets. Basically, Susan, you can afford to experiment - nothing much dismays MAC and if you are unhappy, you can prune it to the ground and start over - it is vigorous and forgiving.

I found this on a forum - it was in response to someone asking to make a photo very large and square, so ignore the references to that. You can experiment and see if you can upload the larger image to photobucket. (note that I think the photo has to be in your pictures folder and not iphoto). "Mac OS X has a built-in application called Preview that is quite capable for simple edits like resizing. First, open the image in Preview (should be the default; if not, right-click the file or click the Action toolbar item (the gear icon) with the file selected and choose Open With and then Preview). Then click on the Tools menu and select Adjust Size. This will open a sheet asking for your desired resolution and dimensions. Type them in, unchecking the Scale Proportionally option if necessary to get an exactly square image. Click OK, save the file (Id recommend saving it with a different name), and youre done. Please note, though, that upscaling JPG files will undoubtedly result in a loss of qualitysometimes a drastic one."

I have not made either, but will follow your discovery with interest. My cheese blend always includes pecorino romano (or parmesean or asiago) in addition to cheddar and usually, gruyere. Both recipes have the sharper cheeses, which helps lift the dish. Fontina would really add to the creaminess as it's a great melting cheese (for fonduta). I have used dried mustard and sometimes, a tiny pinch of cayenne.
