Trixietx, here you go! This is the 3rd time I've made it...It's a real crowd pleaser.

Better Than Robert Redford Dessert

16 servings Prep: 20 minutes

Chill: 2 hours or overnight

Bake: 15 minutes

Ingredients

1 cup all-purpose flour

1 cup coarsely chopped walnuts

1/2 cup (1 stick) unsalted butter, melted

1 package (8 ounces) cream cheese, softened

1 cup confectioners' sugar

1 container (8 ounces) frozen whipped topping, thawed

4 cups milk

2 boxes (3.4 ounces each) instant vanilla pudding

2 boxes (3.9 ounces each) instant chocolate pudding

Chopped nuts, chocolate curls

Directions

1. Heat oven to 350Â°F. Coat 13 x 9 x 2-inch baking dish with nonstick cooking spray.

2. In a medium-size bowl, mix flour, walnuts and butter. Pat into prepared dish. Bake at 350Â°F. for 15 minutes. Cool.

3. In a bowl, beat cream cheese and sugar until smooth. Fold in half of the whipped topping. Spread over cooled crust.

4. Prepare vanilla pudding using 2 cups of the milk. Spread over cream cheese layer. Prepare chocolate pudding with remaining 2 cups milk. Spread over the vanilla pudding layer. Spread remaining whipped topping over pudding. Refrigerate at least 2 hours or overnight. Sprinkle with nuts and chocolate curls. Cut into squares.

You're welcome, Trixie. I've been wondering about substituting different puddings. Luckily at BJ's a few months ago, I found a package of dessert toppings, six kinds. Pink, yellow, green, white, chocolate/white and chocolate curls! They really add a different more sophisticated dimension to the dessert's appearance.

I've put it on my "To Be Bought List". +++++++++++++++++++++++++ TimA -- I read "Peyton Place" a long time after it came out (my mother wouldn't let me read it). Some years later, read it again. I liked it a lot. But for me, then, it was the mother who intrigued me, and her man friend...both such glamourous "grown-ups" w/ exciting lives, even tho' lived in a small town. And the town itself sounded so lovely! The daughter was drab, to me. Don't know what I'd think of "Peyton Place" if I read it now.

Yesterday I finished Turtle Feet: the making and unmaking of a Buddhist Monk by Nikolai Grozni. I started it in May and it just sat there staring at me while I dove into a bunch of mysteries. Yesterday, I decided that enough was enough, and, having a bit of time on my hands, sat down and finished it up. From the flyleaf: "In his early twenties, Nikolai Grozni, a celebrated Bulgarian music prodigy studying jazz piano at the Berklee College of Music in Boston, was struck by a malaise - some form of spiritual ennui - that suddenly robbed him of his passion for music and of any direction in life. He turned to meditation and Buddhism for answers, and eventually traveled to the Dalai Lama's university in Dharamsala India, where he quickly became fluent in Tibetan and took the robes of a Buddhist monk." It was an interesting book - not fascinating - but interesting. I think it would have meant more to me had I ever felt the way that Grozni felt. Now I can give my full attention to Chocolat... except that I am headed to the library in two minutes to look for the Iris Murdoch that Siobhan so kindly suggested, and Arthur and George that everyone has been discussing, and to put in an ILL for an English Murder. Bye Bye Patly! I’m so glad to see that other than McCain, there is finally a Repubican who has enough spine to say what he really thinks and it’s someone who’s well respected to boot. The rest of them need to stop shelfishly worrying about their own agenda’s and step up to the plate as well. Both of those clowns need to go and the sooner the better! Idiots, shear idiots.

Nancy that's similar to Lemon Lush. So you can certainly use any puddings you like.

The original recipe is actually halved of the cream cheese layer, but that's my favorite part, so I double it. When I wrote the recipe out for my site, I wrote it as I make it.

It sounds like you could also substitute "Lite" versions of the cream cheese and Cool Whip, use skim milk instead of whole milk, Sugar Free pudding mixes instead of the loaded variety, to make this a little bit "lighter". But could you substitute light tub margarine for the stick butter? (Light tub margarine has no trans fats. I have yet to find a stick butter that does NOT have trans fats.)

PS The name of the recipe may eventually have to be updated to something like "Better Than Johnny Depp Dessert", grin. Say "Robert Redford" to most of today's youngsters and they don't have the slightest idea who you're talking about!

And yes, you could make this lighter. I did use skim milk, but I don't feel that splenda is safe, and that's what's in the sugar-free puddings that I've seen. I never substitute margarine for butter, but that's personal preference. I don't see why one couldn't. And in the past I've used both neufchatel and light Cool Whip, but I just happened to pick up a whole box of cream cheese from Costco and figured no one would mind splurging for dessert.

We all need the reminders of how to lighten things up in this culture of over-indulging...

When cooking I almost always sub Neufachatel Cheese (which is Philadelphia's brand of lower fat cream cheese) with no discernible difference. I rarely use regular milk or cottage cheese either, rather than going for nonfat, I use 1 or 2% to cut the calories and fat w/o sacrificing the texture. Splenda gives me a sick tummy!
