There are all kinds of gluten-free pasta recipes available on-line, which also include a wide variety of ingredients. I think an investment in a grain mill is a good idea for anyone needing a large variety of gluten-free flours (fresh is best ;-), and many grains (including rice) can be milled in a good-quality coffee/spice mill. Use short- or medium-grain rice for milling rice flour. Long-grain rice flour is fine for dredging or as a thickener, but baking results are better using short- or medium-grain rice (which can also be used for dredging or thickening). Thanks. I was just diagnosed about a year ago--my symptoms were on and off dry coughing that had no reason - for 30 years! For 30 years I coughed periodically, and tried inhalants, and antihistamines, and steroids, and homeopathic remedies, and nothing worked. One day, a doctor said, have you ever been tested for a wheat/gluten allergy? One month after stopping wheat/gluten, I stopped coughing. I am happy to say that I am not severely allergic, i.e. I can eat a little wheat/gluten now and then with no affect, so on special occasions like a birthday, I'll have a small piece of cake and be fine. Most of the time, the recipes I've tried for gluten-free foods have been pretty bad, so I just gave up on that. I am glad to see your website.

Start by combining the yeast and sugar in a small bowl (I use the smallest in my set of three nested mixing bowls). Add the water while gently stirring the yeast and sugar. Let this mixture sit while you mix the rest of the ingredients - bubbles and foam should form if the yeast is happy. 2. Combine the flour mix, xanthan gum and salt in the largest mixing bowl and stir well. 3. In a third bowl, whisk the eggs, oil and vinegar until the eggs are a bit frothy. 4.
