Need suggestions for frozen Lobster and...?

I'm determined to free up some space in the freezer. Tonight's mission-- frozen (not defrosted) lobster claws from Costco. I'm leaving work now and heading home. I don't want to make a decadent lobster mac & cheese, even if I had the recipe. DH watches his carb intake and would probably prefer me to make something cioppino-esque.

On hand I have an onion, canned tomatoes, tomato soup, chicken & vegetable broths, couple of small potatoes, healthy linquine, frozen wild salmon, celery, garlic, milk, lemon and probably much more. I'm not much of a lobster lover, so it's primarily DH's meal. I'm planning on attacking the cache of frozen wild salmon from TJ's (meh).

I've blown the last two night's meals. Help me CF'er's give me a clue if this is do-able tonight!

How about a lobster quiche?
You almost don't need a recipe...just put a bit of sherry in your egg/milk or cream mix.
And you can make it crustless...butter your pan very well and press dry bread crumbs into the butter....or perhaps oatmeal, but I like dry bread crumbs better.
Or you could make a giant salad and put it in there.
I like the "cioppino-esque" idea too....but don't use tomato soup...but rather canned tomatoes, onions, peppers bit of chicken broth...

I'm sure you've already eaten..............but....

I like Lindac's salad idea. Then you can taste the lobster!
As much as I love cioppino....I don't think I'd bury the lobster in it!

Crusty bread, big salad, YUM!

Lars, I've not cooked frozen lobster in a couple of decades but, for fresh, I've learned that they're best if I par-boil them for about 2 minutes before halving & putting on the grill. That way, I'm sure they'll be cooked properly without having to leave on the grill very long. Once on the grill, I baste very simply with melted butter, a gulp of white wine, minced garlic, & fresh lemon juice. Sometimes, I'll add a bit of minced thyme and/or rosemary but just a tiny bit. Once grill marks appear (won't take long, just a couple minutes) I get them off the grill. I think you'll do best if the tails are thawed before grilling. Soak wrapped in a bowl of cool water to thaw. Enjoy! /tricia

Seagrass, I deep-fry battered dill pickle slices all the time. If you've never tried it, they're sooo delicious! Especially good with a ranch-type dipping sauce. Joe, thanks for all the recipes and tips! I had a feeling maybe a different style of sauce might be best. I'm a sucker for good sauces, so I think I'll try both. Cilantro isn't my thing, but hot Chinese mustard sure is. It would be okay to sub Italian parsley for the cilantro, wouldn't it? And those olives sound great. Will definitely throw some in the pot with the pickles next time. Fried rattlesnake is very common in Texas, but I never got up the nerve to try it. Thanks for confirming that my wussiness didn't cause me to miss out on much, RE. :) And thanks for all the wonderfully clear and detailed instructions! I've fried shrimp several times and oysters once but wasn't totally thrilled with the results. I feel *much* more confident now that I can pull this thing off successfully. Will have a practice session with some shrimp tomorrow. Jim -- great tip about not overmixing. Just like muffin batter, huh? Who knew? I've always stirred to a faretheewell... I was wondering how on earth to get the things out of the shell while still raw. Parboiling sounds like it might work, but any idea how long? (I think the tails are usually around 6 oz.) I also really like your suggestion about using tempura for the veggies! Now all I need is a good appetizer. Linda C., I'm sure you're right about the tails. My friends were visiting near the Gulf Coast, so warm-water lobsters makes sense. And we're so far inland that I'm sure frozen will be the only kind available. So, all you Mainers, we're NOT committing heresy! :) Want to hazard a guess as to how long they should be parboiled? Greatly appreciate all the help! Any more tips and recipes welcome. sm

Well it was a success....and the salad never got made! I steamed the crab legs in a huge pot with a colunder in the bottom to keep the crab out of the water. I cut out the under belly of the lobster, made a cut to the back shell, inserted a skewer to keep it from curling,stuck 2 skewers down the back to keep it from curling, put a couple of pats of butter in the slit, squeezed some lemon over, made each a little boat of foil, to contain the juices and butter and baked at 350 for about 8 minutes.. They were opaque so, with shears, I cut each in half lenghtwise....the shrimp got stuck on a skewer, basted with a terayaki, brown sugar, garlic olive oil stuff and grilled just to brown. Half were served raw with cocktail sauce> All the lobster was eaten, 3/4 of the shrimp and 3/4 of the crab...2 1/2 loaves of bread and 1 1/2 pounds of butter and easily a dozen Meyer lemons! Burp!

You can get cold water lobsters any time of year but they are most plentiful (and I think cheapest) in the summer months. Scallops are in season through the winter months-- December until March/April if I remember correctly. We always have scallops for Christmas because they are so fresh and so good then! I would strongly recommend getting fresh/live lobster in order to make your lobster rolls. You can generally get frozen lobster tail anywhere but it's just not going to taste as good as you are remembering! I frequently buy precooked crab meat but I just wouldn't do it with lobster. If I opt to go with presteamed crab and shrimp, it will have been done that day-- the crabs will be fresh. We have plenty of local businesses that will gladly do both. What they won't do is clean the steamed crabs as my dad and grandfather used to do for us when we were growing up. They'd get bushels of crabs, steam then and clean them all out before serving them on the picnic tables. I was an adult before I knew that you have to clean your own crabs!

Thanks, but traffic was unbearable and the two steaks in the fridge were a much faster and less stressful option. I'm possibly out for dinner tomorrow, so it will keep in the freezer until next week.

DH would love a quiche, but I couldn't eat it at all. Wouldn't defrosted lobster be mushy in a salad? How would you defrost it?

I would definitely NOT use frozen lobster in a salad. Both texture and taste are diminished by freezing.

Quiche would be fine as would cioppino. Do you have any interest in Lobster Mac & Cheese? I didn't care for it at all, but some people seemed to like it. What about in a newberg type saucce over rice or in a crepe? Or even an old fashioned creamy lobster stew or lobster pot pie.

LEt us know what you decide!

The lobster is probably gone by now but my favorite "light" way to prepare it is to saute some slivered red peppers and onion, add some white wine and chicken broth and cook it down, then stir in some steamed asparagus, the defrosted lobster, chopped parsley and also a little bit of tarragon if I'm in the mood for it. Serve over pasta.

When you DO decide to use it, just pop it in the fridge the day before!
You can make crustless mini quiches in a muffin tin.
I just mix my egg/milk mixture with a tablespoon or two of flour.
Stir in seasonings, lobster, veggies, cheese.
Divide into pans and bake until set.

Quiche freezes well and DH can have one whenever. They're also great 'grab'n'go' lunches!

Deanna, that sounds like a winner! He loves quiche and mini quiches would be just the thing and an easy lunch option too!

Alexa- he has had two awesome lobster mac & cheese dishes at different restaurants and would be ok with it for one meal However all the recipes seem rather large. No one else in the family would touch it! However I'd make him a single serving portion if anyone has a great recipe. He looooooves cheese!

Ellen, I have no suggestions other than melted butter. Lotster and melted butter, and I'm good to go.

The quiche sounds good too and ruthanna's picture looks delicious, but all I really need is lobster and melted butter.

I agree with LindaC on the cioppino, I made it a couple of times and I love the stuff, but I wouldn't bury lobster in it, too much other stuff in there to appreciate the lobster.
