garlic mashed potatoes

I'm looking for a recipe for garlic mashed potatoes. Can I just saute some minced garlic and add it to the potatoes? I don't have time to roast the garlic.

Teri, roasting is best, but a fast saute will do also. You can also simmer some garlic in the cream as it is heating.

Teri, you can roast it a day or two in advance and just keep it in the fridge until you need it. I do that all of the time as I just love roasted garlic as a spread or an addition to many things.

I get a lot of volunteers in my garden, some planned, some surprises: - Tomatoes & peppers get pulled out, because there's no room for any that weren't planned for... and as a seed saver, I can't trust their purity. Currant tomatoes, especially, can be a real weed... I will never again grow them in my vegi garden! - There's always a few garlic plants from missed bulbils, which I transplant & keep. - Dill comes up everywhere (I guess that's why some call it "dill weed"), I always let a few plants grow for pickles, and let a few go to seed for next year. - Ground cherries volunteer readily, you only need to plant them once. - An exploding gourd (Cylanthera explodens) surprised me by coming up strongly in the cool weather of early May. - Soybeans also came up in early May, I wish I knew what variety (I grew 28 last year). - Many of the flowers that I grow to attract pollinators (cosmos, sunflower, cleome, flowering mallow) volunteer, and are moved to better locations.

This was our first year planting potatoes, and we have learned the basics and some lessons. We grew them in the ground, which was fine, but its bins or tires next year. The number one problem we had was Colorado potato beetles. We didn't know they existed before this season. Wow, did they sure home in on our plants. We eventually did get them under control, and have been geting new potatoes as we need them. Waiting for end of season harvest now. Looking forward to our sophomore season next year as potato growers.

Lars, it wasn't cool in the daytime, it was well into the 70s, but early morning and after dark it cooled off into the 40s, enough that I wished I had not forgotten that jacket. Hey, I think YOU look better than that shirtless guy on the street corner too. AnnT, I loved the market. I told Elery that when I got to the cheese shop with a million cheeses, I think I blacked out, LOL. And the bread was amazing. I also got a Montreal style bagel from St. Urbain, but I messed up. I asked for an Asiago Cheese bagel, and when I got back to the hotel, I found she had actually given me a pastry filled with some sweetened ricotta filling. It was so busy I probably got someone else's breakfast. Peppi, if you head that way, call me first, I'll go with you. It was great fun. Hey, maybe Linda (doucanoe) wants to come along too. If you really used 3 whole HEADS and not just 3 cloves, I suspect the garlic was some of that tasteless garlic I have discovered lately. Don't know where it comes from....but it's lacking flavor. Normally I would add one head for 5 pounds of potatoes.....depending of course how big the heads were. And I don't roast my garlic before making garlic mashed potatoes. I just put peeled cloves into the potatoes while they are cooking and then mash all together.

Thanks. I was in a hurry and waited to long to roast the garlic. I too love roasted garlic. I like to eat it roasted and spread on baguettes with brie cheese.

I make garlic mashed potatoes by just adding a couple of cloves to the water the potatoes will be cooked in. I also add a little milk. When the potatoes are done, I reserve a quarter cup liquid and mash the garlic as I mash to potatoes, then return the liquid and add more milk and butter as I want. Delish...

Yup, just peel the cloves and boil them along with the potatos. They mash right in. By far the least fuss and muss.

Boil several smashed or diced cloves in with the potatos.

The garlic gets sweet and nutty when you do this.

Roasted garlic- Hi, where I live the grocery stores sell minced/chopped regular and "Roasted" garlic in little to medium sized jars that you can just keep in the frig and add directly to your recipe. it's not as good as what you can make at home but ok.

As for the whole recipe I'll let these ladies help you in that direction. You will be a LOT better served.

Another vote for the "toss in some garlic with the cut up potatoes and then boil it all up" camp. Not as good as roasted, but tasty nonetheless.

Roasted garlic is wonderful in mashed potatoes. But like Whiteorchid and others I often just toss some garlic in with the potatoes as they cook and put the garlic through the ricer with the potatoes.

What an obvious and brilliant idea. I have done the roasted garlic mashed potatoes, and love them, but I never thought to just boil the garlic in with the potatoes. I wish I had thought of that a long time ago. Oh, boy, another easy way to use garlic. :-)
