AnnT's Danish makes a perfect.... King Cake!!

I knew as soon as I tasted my first delicious bite this winter that Ann's Danish recipe was perfect for King Cake! I decided to forgo the traditional round shape so that they'd fit in the mailing boxes easier and also I wouldn't need to double the recipe. Unfortunately, purple sugar is impossible to make with red and blue, so I only had two of the tradional Mardi Gras colors. Next year, I'll be better prepared.

The USPS will be able to continue on without any bailout, as I have helped greatly with funding by shipping three of the cakes to my three youngest sons in VA, NC and NYC. Hand delivered the fourth one to my oldest .... wasn't it nice that the recipe makes four??

I've been missing everyone here on the forum. I returned from VA and then was off to San Francisco for a week. I'm looking forward to catching up and to cooking again!

Those are beautiful,Grace.I would love one.We usually have a seafood guy who comes by our office at work every 2 weeks and usually has the BEST king cakes from new orleans.He didnt bring any this year.I was so dissapointed.

My one and only king cake was at RiverRat's house; she ordered from a local LA bakery. Yours could give them a run for their money. I love the King Cake concept.

Here you go. Home Cookin Chapter: Recipes From Thibeault's Table Cream Cheese Danish Coffee Cake =============================== Source: Home Cooking Magazine 1 c sour cream 1/2 c sugar 1/2 c butter 1 t. salt 2 packages dry yeast (4 1/2 t.) 1/2 c warm water 2 eggs beaten 4 c all purpose flour Over low heat in a small saucepan, heat butter, sour cream , sugar and salt until warm and sugar is dissolved. Cool to room temperature. In large mixing bowl, dissolve yeast in warm water. Mix sour cream mixture with yeast and add beaten eggs and flour. Will be a very soft dough. Put in fridge overnite to rise. (May be done same day. Put in fridge for about 2 to 4 hours, and then proceed. Turn dough out onto a well-floured surface and knead 6 or 7 times. Divide dough into 4 equal pieces and roll each piece out to 12 X 8 inches. Spread 1/4 of filling on to each piece and roll jellyroll style from long side. Pinch seams and ends to seal. Place seam side down on buttered baking sheet and cut X's in top. (About 6 X's) (Danish should be slightly flatten, and about 3 1/2 to 4 inches wide and about 12 inches long. Cover and let rise until about double in size -approximately 1 hour Bake at 375 for 20 to 25 minutes or until golden. Let cool on wire racks, Filling 2 packages 8 oz. cream cheese 3/4 c sugar 1 egg beaten 1 t. vanilla extract 1/8 t. salt Filling: To make filling beat together cream cheese with sugar, add egg and vanilla extract and salt Glaze 2 1/2 c confectioners sugar 1/4 c milk 1 t. vanilla extract toasted sliced almonds. Combine the first 3 ingredients for glaze and drizzle over loaves with toasted almonds

Like Terri, I have some leakage when I add jam to the cream cheese, I usually just open a jar of homemade jam and use it as filling on top of the cream cheese, I like them both together. And it freezes wonderfully no matter which filling is used. Arlene, just use a pie filling recipe, if you want just fruit, or jam, or make a fruit filling out of any fruit you have, sweetened and cooked, mix a little cornstarch with the liquid and thicken it and voila! Fruit filling of your choice. I'll bet lemon curd would be really good in these along with the cream cheese... Annie

Lucky boys that's for sure. I was thinking the same thing while checking out king cake recipes yesterday. My first one was a from a mix sent to by a former memeber. It was good and came from a place that makes and sends them all over the country. I didn't make one as I never made it to the store to buy the colored sugars. They look great Grace!

Well, I didn't make it into King Cake, but I made Ann's danish over the weekend, too!

Yours are much prettier than mine! I froze two for later. I also added raspberry to the filling for two of them.

Grace, Great idea. Love how you decorated the danish. I have never made a Kings Cake and didn't realize until recently that it had a cream cheese fillilng.

I think I still have a Cream Cheese Danish hiding in my freezer.

Ann, they used to be only cinnamon sugar danish doughs but they have branched out now and cream cheese is a big favorite. So if Kandm has only had dry ones they were just made with a sweet dough and not the real danish type ones, so yeah, your recipe is perfect. A lot of places do just make a sweet bread dough. Cheaper and easier I suppose.
