u-sand and waterlox finish question

My husband and I are looking at unfinished oak flooring. He is going to install the flooring.We are starting with a smaller bedroom project. We got a couple sample pieces that definitely have about 1/16th in difference in height. Will the U-Sand be able to take off enough to even the difference or would it be better to hire a professional to sand the floor?

Next we are considering the Waterlox finish, in a satin or maybe matte finish. We have 2 larger dogs (labs) that we know will eventually put marks into the floor so we thought the option of Waterlox would

allow us to make easier touch-ups, etc. However, a local flooring specialist has tried to steer us away from this finish, saying in his experience the customers are ultimately dissatisfied due to a "dirty-looking and darkening" appearance. Has anyone had this experience, especially with heavy dog use, etc. We are NOT neatniks who take off their shoes, etc when coming in the house. We also live in a rural setting and dirt and dust are commonplace. We are interested in the DIY option to save money but want to be satisfied with the end result.
