recommendations peel-and-stick vinyl tile or other?

We're getting towards the end of our kitchen remodel, and because of a couple surprises, need to scale back. We were planning to use a solid vinyl tile by Metroflor and have it professionally installed, but now will have to do something DIY, probably peel-and-stick vinyl tile. (I want vinyl because of the laundry area, the bathroom, and the incontinent cat.:)

Just wondering whether there's a peel-and-stick tile you all prefer over others, or whether there's some other inexpensive flooring option I've missed. I'm one of the people who's bothered by the clicking sound of laminates (even with a good underlayer, when other people say they can't hear anything), so I don't want that. I thought about possibly trying to install the Metroflor product myself, but have never worked with troweled-on adhesive before and am not sure I could do it.
