I told you all I can, about your oven. The Cookie tin wouldn't be an issue,unless you have an unusally large one. because heat transfers thru tin in a matter of seconds. They all measure about 11 inches X 16 inches on the outside rim. I would double check your oven temp.again. Something is not right. Another thing I thought, maybe the oven Controls are not going off and on like they should. Next time you Bake something for an hour, check the temp. every 15 minutes or so, to see if it is holding at your set temperature. You can use a cheapo thermommeter. Just check it in boiling water. Lou PS : Don't forget to let us know if you solve the problem.

Here is a no fat, no calorie treat I make (ok, not really, but you can pretend it is. LOL): Cut the crust off pieces of really fresh, soft bread. I usually use white. Spread with softened cream cheese and roll up jelly roll fashion. Cut into 4-5 pinwheels. Dip the pinwheels into butter, then into a mixture of cinnamon and sugar. Bake at 350 for 8-12 minutes, depending on how browned you want them. Longer for crispy...which is what I like. I love these things. I used to make them for my boys when they were little. I still make them on occasion as a "memory jolt". I also sometimes add chocolate chips. (Using the new non-stick foil works really well with these...and they do not store well. You will have to eat them all at one sitting.)

I've read it is not good for cheesecake but I don't make cheesecake anyway. I have seen recipes for cheesecake using it in Cooking Light magazine, but I dunno if the recipes are any good. Probably not good in danish and the like either. I use it mostly to spread on bagels and toast and english muffins, in which case it tastes just fine. I top it with a dab of homeade jam, yum. Great with lox, since that has a strong taste so I don't miss the extra taste for that application. Fine with those dream eggs, because they were flavored with the herbs anyway, and the neufatchel just added a wonderful creamy texture, even with 1/3 less fat. Since cream cheese is almost pure fat, 1/3 less doesn't make it a diet food by any means, but I like it just as well if not better than cream cheese for what I use it for, so that's what I buy for the calorie savings. I don't mind it in party spreads either. I think we have become so used to having our food sources possibly contaminated that the manufacturers are doing a huge CYA on the recommendations. You can make your own cream cheese....but warning it involves unrefrigerated milk and cream for 12 hours while the culture grows....and you will need to leave it out another 5 or 6 hours to drain. Cheese needs to be aged in a cool place....most cheeses...but when it has developed it's fine at room temp. Cheese is funny stuff....it won't "set" if there is any antibiotics at all in the milk used.....and if you are using pasteurized milk, you need to add a culture. As cheese ages it gets more acedic ( that's a very general statement) and less friendly for harmful bacteria to grow....check on line and see the number of cheese makers that ship their aged cheeses through the mail....without ice packs!
