THE Best Buttermilk Pancake Recipe

I just read the post in which the OP asked which appliance cooked the best pancakes. I agree with one of the respondents who replied that it's the recipe that makes the best pancakes.

Here is my grandfather's prized buttermilk pancake recipe. He lived from 1895-1977, and was a wonderful cook. He invented this recipe and made it all of his life. Growing up across the street from my grandparents, I couldn't wait to get that phone call that said "griddle's hot; come up for pancakes". Grandmother and he would invite the neighbors and us in for breakfast at least one Saturday each month, and all of the adults would sit around eating his wonderful pancakes, drinking coffee, and visiting, while he'd be producing stacks of these pancakes. It's a great, great memory.

I'm sharing this with all of you because, except for my 87 year old father (my son of my grandfather) no one else in my family cherishes this memory, or makes pancakes, or remembers my grandfather (they were born when he was much older). As I have no children to pass this memory and this recipe down to, I'm sharing it with people who have an interest in cooking, and love great food.

Please note: It's required that you serve this with butter and genuine maple syrup. These pancakes are very light; these are not buckwheat cakes or anything heavy. These are light, light, light. I just made them this morning for house guests who were here skiing, and they ate every morsel, complimenting the pancakes with every bite.

Grandfather Corliss' Buttermilk Pancakes

1 egg

1 pint buttermilk

1 level Tbs sugar

l level tsp baking soda

2 level tsp baking powder

1/3 tsp salt

6 rounded Tbs flour

Beat 1 egg till fluffy. Beat it and beat it, because you're whipping the air into it. I use an electric mixer; my grandfather used the old fashioned egg beaters. Add buttermilk and beat some more -- again, you're adding air to it. Add rest of the ingredients, and beat.

Heat your griddle (I use an old Sunbeam waffle-maker/griddle I received as a wedding gift in 1967) and make a test cake. Depending on griddle, sometimes I'll very lightly apply a thin coat of oil or bacon grease. Other times I don't. The test cake should be light in texture and taste good all by itself. Cook cake to color you prefer...although I don't like a dark cake. These pancakes are thin....However, if the test cake is too runny, add a bit more flour. Your may need to work with the recipe a couple of times to get the right amount of flour....I do just use a rounded Tbs of flour.

This recipe makes about 12-14 pancakes. I've easily fed 4 people with this recipe, especially when I've served bacon or sausage and eggs along with the pancakes. Poached or soft boiled eggs go wonderfully well with this, and are my favorite accompaniment. However, I mostly serve scrambled eggs because that's what many of the guests prefer.

I hope you enjoy this recipe as much as I do. I've been making these pancakes for 44+ years. My dad and I are the only ones left who know The Recipe.
