Smoked Chicken is Awesome.

We smoked our first chicken yesterday and think we're finally getting the hang of it. I have to respectfully disagree that any experiment in the smoker will come out well, as I'm one of those people who wants to taste the meat with the smoke. Because of that we have backed off the usual recommended amount of wood for smoking. I read about painting a mayo with spicy chicken rub concoction onto the chicken to keep it moist and it turned out so well I couldn't quite believe it! I thought initially I should brine it, but didn't want to take the time. I don't think I'd ever need to brine a chicken again after discovering this preparation. I'm serving a smoked chicken chop salad tonight, and really looking forward to it.

Here's what I used: 1/2 cup mayo; 2 T. spicy chicken rub; 1.5 ounces apple wood. Cut out the backbone and flatten the chicken. Paint the chicken with the mayonnaise concoction. Smoke at 2-1/2 hours at 210 degrees; bump to 250 degrees the last 30 minutes.

The skin didn't look like anything I'd want to eat, but the meat was beautifully seasoned. Does anyone else have any great smoker techniques or recipes you would like to share with me?
