Sweet Potato Gratin Recipe ?

Anyone have one?

I have a lovely fresh ham out for dinner and just realized I have no regular potatoes for scalloped potatoes. It's a holiday here so all the grocery stores are closed so I have to work with sweet potatoes.

I'm guessing I can just sub sweet potatoes in my normal gratin recipe but I was wondering if any of you have done that. Better still maybe you have a gratin recipe just for sweet potatoes.

Or I could just bake them like I normally do but I did have my head around scalloped/gratin potatoes.

I make them basically the same using cream but with sweet potatoes I add a bit of cinnamon & nutmeg. I top with Panko mixed with melted butter & a bit of real maple syrup.

For more savory, I don't use the cinnamon but add some parm in the bread crumbs.

The ham sounds good.

Thanks Tricia, sounds good to me not so much the cinnamon but for sure the nutmeg.

Unfortunately I just mentioned the idea of a sweet potato gratin to Clive and he was not inspired to try it! LOL

So I'll be doing baked sweet potatoes along with the ham.

Depends on how you feel about leafy greens, and also how your family feels about them. I LOVE them, and I often add them to potato/cheese dishes to give it another layer of flavor and a little "kick" or tang if you will. Also, chard goes great with bacon flavors too. But if you don't like the flavor or texture of greens, then leave it out because it will ruin this for you. To me, it makes the dish, but I'm a chard lover from way back. My uber picky dad probably wouldn't even LOOK at a dish like that.

Just use mashed fresh sweet potatoes for this if you don't want to use canned: SWEET POTATO PIE WITH STREUSEL TOPPING One 23 oz can sweet potatoes, drained & mashed (1 3/4 cup) One 14 oz can sweetened condensed milk (like Eagle brand) 1 egg 1 tsp nutmeg 1/2 tsp cinnamon 1/4 tsp ground ginger 1/8 tsp ground cloves, optional 1 unbaked pastry shell Mix potatoes, milk, egg & spices together until smooth. Pour into pastry lined pie pan & sprinkle w/streusel topping. Bake in a preheated 350Â° oven for 50-55 minutes or until knife inserted in center comes out clean. Serve warm.~~ STREUSEL TOPPING 1/4 cup packed brown sugar 2 TBL flour 2 TBL pecans, chopped 1/4 tsp cinnamon 2 TBL firm butter Mix brown sugar, flour, pecans, cinnamon & butter together. This is our favourite Sweet Potato to serve with Ham. Not really a gratin but delicious. Moe actually requests this dish.

Sweet Potatoes with Caramelized Onions
======================================
Recipe from Gail

3 or 4 Sweet Potatoes
1 large onion
olive oil
butter
Salt
Pepper

Cook onions in oil and butter until caramelized. Should take about 25 to 30 minutes.

While onions are cooking Boil potatoes until tender. Run under cold water to remove peel.

Mash sweet potatoes, add caramelized onions, a chunk of butter and season with salt and pepper to taste. If you like them even creamier add a couple of tablespoons of heavy cream.

Chase, have you tried scrubbing the sweets, remove any blemishes, cutting into 1/2" strips. drizzling with olive or coconut oil, sprinkling with salt, pepper or Old Bay and oven bake in single layer on a jelly roll pan? They are great and non-sweets eaters even enjoy them. Have only one bushel left from my 09 crop and enjoying them fried as well...these are organic, so simply scrub, slice and fry. Not labor intensive IMO. enjoy.

I made sweet potato gratin once, I think I got the recipe out of Mark Bitterman's "How to Cook Everything Vegetarian," but it was basically sweet potatoes layered with a cream sauce. I have to say I was NOT impressed with the dish. For whatever reason, it just seems like squash and sweet potatoes do not go with a creamy sauce in my tastebuds preferences. Their "sweet" flavor either calls for more sweet, or something tangy like tomatoes, pineapple or bitter greens. I like them roasted with caramelized onions too!

A big thanks to Steve! I made Pommes Anna with the sweet potatoes and it was delicious. Satisfied my yen for a gratin type dish and Clive really enjoyed it too.
