Kneadning and Rising ... more bread questions

Thanks to this forum and to a short class I took on making challah, I am now venturing into the breadbaking world. Wheeee!!! I made a challah and it was easy and I was thrilled at how easy it was, as opposed to how complicated I THOUGHT it was gonna be. So Saturday, I made some rolls. Based on that roll making experience, I have two questions:

1. Rising time. The recipe said first rise should be 1 to 1.5 hours to double in size, it took 2 hours. The second rise, in the pan after forming the rolls was supposed to be 45 minutes but it took about an hour and a half. No biggie as far as me having time to wait, and they turned out just fine. I'm just wondering what affects rising time like that.

2. Kneading. I quit kneading when the dough seemed to be the right smoothness and texture, you know, it just felt right. Well as right as it could feel based on my EXTREMELY limited experience. I wondered if I kneaded it enough, if that could affect rising time and if a dough can be overkneaded, iow, could I have ruined it by kneading too much?

Thanks for advice and answers. I'm really excited about getting into baking bread. My next project will be a loaf of whole wheat.
