Here's one I remembered for Cheeseburger soup at ToH. I don't know though, how good it is.

I have made this recipe many times, it freezes well too.

SPICY CHEESEBURGER SOUP

2 C cubed potatoes (peeling optional)
1½ C water
2 carrots, grated
½ C chopped onion
½ C chopped green pepper
1 jalapeño pepper, chopped
1 clove garlic, minced
1 tsp salt
1 Tbsp beef bouillon granules

Combine the above in a large pan and cook until potatoes are tender.

1 lb lean ground beef

Brown and drain ground beef and stir into cooked potatoes

2½ C milk
3 Tbsp flour

Combine flour and milk and stir into soup. Bring to a boil then reduce heat.

½ lb Velveeta Cheese, cubed (have used cheddar also)
½ tsp cayenne pepper

Stir into soup, just until cheese is melted.

bacon crumbles (optional)

Top each serving with bacon if desired.
Makes 4-6 servings

Wiz's Cheeseburger Soup is fantastic, I've made it and we've loved it! I also like a really plain, hamburger soup that I have had up in the Adirondacks and haven't ever found anywhere else in my travels and here it is.

Hamburger Soup

2 lb lean ground beef
1 cup diced carrot
1 cup diced onion
1 cup diced celery
10 cups beef stock
1 28 oz can crushed tomatoes
2 cups macaroni
salt
pepper

Brown hamburger and drain fat, season with s&p, add onion carrots and celery and cook for 10 minutes. Add beef stock and tomatoes, bring to a boil then simmer for 45 minutes, add macaroni and simmer 10 more minutes.

Vegetable Burger Soup
makes 10-12 servings

1 lb. ground beef or pre-cooked frozen ground beef
2 lbs. can stewed or diced tomatoes
1 1 lb. can tomato sauce
4 cups water
2 10 oz. pkgs mixed frozen vegetables (carrots, peas,
corn, green beans)
1 envelope dry onion soup
2 t. sugar - white or brown

Brown beef and drain off fat if using fresh. Thaw beef
if using frozen precooked. Add rest of ingredients to
soup pot or slow cooker. Bring to a boil, lower heat
and simmer one hour if in pot on stove. Cook on low
for 8 hours if in crock pot.

I add diced potato to this soup, but not if I'm planning to freeze it. Elbow macaroni is good too, if you'd rather not put in the potatoes.

I have no clue why this is called "Italian". But it sure is good!

ITALIAN VEGETABLE SOUP

1 lb. ground beef
1 cup diced onion
1 cup sliced celery
1 cup sliced carrots
2 cloves garlic, minced
1 can (16 oz.) tomatoes
1 can (16 oz.) tomato sauce
2 cups water
5 tsp. beef bouillon granules
1 (15 oz.) can red kidney beans, undrained
1 Tblsp. dried parsley flakes
1 tsp. salt
1/2 tsp. oregano
1/4 tsp. sweet basil
1/4 tsp. black pepper
2 cups shredded cabbage
1/2 cup small elbow macaroni

Brown beef in a large dutch oven; drain. Add all ingredients EXCEPT cabbage and macaroni. Bring to a boil. Lower heat; cover and simmer 45 minutes. Add cabbage and macaroni; bring to a boil and simmer until vegetables are tender. If you prefer a thinner soup, add additional water or broth. Yield: 12 servings.

Made the one from TOH today the kids loved it!

How nostalgic this is..I grew up eating hamburger soup all the time as it was one of Mom and Dads favorite. I always despised it though! Moms was like Teresa's I think. Soupy, with some tomatoes and not a stew.
I dislike hamburger in most forms to this day because of that soup!
But with cabbage, now that might be good to me. With garnishes of cheese and onions.

I make something like
Pat's Italian Vegetable Soup.
Only I cut back on the Tomato's and add some potato's.

I use my Italian Hamburger Recipe and make small Meatballs.
Brown or bake them and add to the Soup.
But then, I make it into a Stew.

The one I grew up on is called Hamburger Stew..
And I love it...

Hamburger Stew

1 lb ground beef
1 onion, chopped
1-2 carrots and celery stalks, chopped
1-2 potatoes, cubed
1 can of cream of tomato soup
1 can of pork n beans
1 pkt of taco seasoning
several soup cans of water until you get it to the consistency you want

Brown the beef, toss in the veggies and soften. Pour in the soup, pork n beans, taco seasoning and water..cook until everything is heated through and the veggies are soft to your liking.

What happened to Spring?!?!? It is FREEZING here and snow flurries are falling! I think Cheeseburger Soup is going on the menu for tonight!

I made soup w/ hamburger last night & am going to make Broccoli soup tonight!

Everyone loved the soup I made last night. It was a throw together, make it up as you go meal & turned out really good.

Started w/
1# Hamburger
1 lg onion, chopped

Brown together & drain off fat. Return to stock pot & added

1 qt. home-canned tomatoes
1 can black beans, drained & rinsed
1 can corn
Garlic (I used 2 t. granulated garlic)
1 jalapeno, chopped
1 can chicken broth
Leftover brown gravy (1-1 1/2 cups)
Leftover cooked rice from freezer (about 1 1/2 cups)
2 T. chopped fresh cilantro
Black pepper
Salt to taste

Additional water to make it 'soup'.
Cooked together approx. 30 minutes served it over corn tortilla chips (fried up all the corn tortillas that I had in the refrigerator) & topped w/ grated cheddar cheese, a dollop of sour cream & addt'l jalapenos to suit.
