Installing Drywall Above The Mantel

We are remodeling a house and would like to remove the current brick facing from our woodburning fireplace above the mantel to the ceiling, and install drywall from the mantel to the ceiling, as I've seen in many installations. I'm confused however, about the code requirement of 2 inch minimum clearance of the chimney to combustible material. How can drywall be installed on the masonry chimney to bring it flush with the existing surrounding wall without using furring strips on the chimney, which violates the minimum combustible material clearance rule?
