Thanks for the heads up Eileen. The few times I have eaten there I did not like what I had. I will try the chops if I go again.

banana pepper relish is this recipe safe?

Well, apples are a whole lot different than peppers, so she took a risk in making that change. Looking at the recipe and comparing it with a pepper and onion relish at the NCHFP, generally it's OK except for one change. I'd double the vinegar to 6 cups so that the relish isn't so dense and dry. That impairs penetration of the vinegar into all the contents during cooking and also interferes with heat penetration during processing. If you find it too liquid you can always drain off some of the syrup before serving. Also this relish is very high in sugar. If you decide you don't care for that, you can reduce the sugar as low as 1 1/2 cups. Carol

Chase, thanks for the help. I can get Swanson's broth without garlic in it, so I'll give that a try. We are having chops for dinner tonight, but I don't have much energy at the moment after a bit of asthma attack + ear infection. So, whether I try something new, or stick with the usuall, we will see! Tami

pork chop question

I agree, the pork steaks have more fat marbling which yields a moister and more tender piece of pork. As LindaC and others noted, today's pork chops are from much leaner pigs, and so overcooking will yield you a tasteless, dry and tough piece of shoe leather that doesn't resemble a pork chop at all in either flavor or consistency. I don't like rare pork, so mine gets cooked all the way through but I'd far rather have a pork steak or pork roast than a chop. Heck, I don't even have Carl cut chops when I have a pig butchered because neither of the girls ever liked them either. And, as Rita noted, they are mostly full of "flavor enhancers" which are really only salt and water, so if you're watching your salt intake it's gonna jack that up there. I do brine loins in apple cider based brine and it adds a nice flavor but it also adds even more salt. Cook them for a much shorter time and they'll be better but they won't ever taste like a pork chop "used to". It's a different variety of animal altogether nowadays, nearly all commercial pork is from Yorkshire or Hampshire hogs, long and lean animals with good feed conversion rates. You can still get "heritage breeds" from local farmers, and you'll get the flavor and texture you used to get, but the small scale raising of hogs is expensive and labor intensive so it'll cost you more and the meat will be fattier than most people have come to expect. RECIPE: Pork Chops in Onion Gravy

Sounds great, Khandi. Puts me in mind of a traditional southern approach called smothered pork chops. Here's one version: 2 tbls flour 1/2 tsp pepper 1/2 tsp salt 6 thick pork chops (I use boneless center cuts, myself) 1+ tbls oil 1 large onion, sliced thin 1 cup hot chicken broth 1/2 cup hot apple juice Preheat oven to 350. Mix 1 tbls flour with the salt & pepper on a plate. Dredge the chops in it on both sides. Brown the chops in the oil until golden brown. Transfer to a baking dish just large enough to hold them in one layer. In the same skillet saute the onion until soft and golden. Add the remaining flour and stir thoroughly. Add the hot liquids slowly, stirring. Cook about three minutes more, or until sauce begins to thicken. Pour sauce over chops. Cover tightly with foil and bake 20 minutes. Remove foil and bake another 20 minutes.

The last time I was there the chicken tasted off and the texture was mushy. The manager came by and I told him about it. He said that my 4 bites indicated that everything was fine. I told him that he could take the plate, I would pay, but never be back. That was 4 or 5 years ago, and I won't go there again. We eat out regularly, but usually for lunch. When we go to dinner, we go to places are are priced the same as Carrabba's or higher, but we will not grace their doors again. I make a really good Marsala sauce and it would probably taste good with pork chops! Thanks for the idea!

Beachilly, that type of regard from management might explain why our local Caraba's closed a few months back. I had only been there once right after they opened. They were still 'training' the staff at that time. The food was not very good and we never went back. Now they have closed. Many restaurants in this area have gone under. It is really sad since even some of the big chains are closing. A big mexican chain closed abour 3-4 years ago and the building is still empty. Not good. The economy sucks and people aren't letting go of disposable income for crappy food, bottom line.

Here is the recipe I use for Chicken Marsala. I can see using boneless pork chops for the same recipe:

CHICKEN FOR MARSALA
4 B/S chicken, pounded thin
Flour for dredging
Salt and pepper
2 Tablespoons butter
2 Tablespoons olive oil

Between two sheets of wax paper, pound chicken until uniformly ¼" thick. Mix salt, pepper, and flour. Dredge chicken in flour mixture and shake to remove excess. Heat a heavy skillet and melt butter. Add olive oil. When hot, lightly brown chicken on both sides and remove from fry pan to oven-going pan. When cooked, remove the chicken to a cookie sheet and keep the chicken warm in a 200° oven while you make the sauce.

MARSALA SAUCE
3 Tablespoons olive oil
¼ cup onion, diced small
1 Tablespoon garlic, minced
½ lb. fresh mushrooms, sliced
3 Tablespoons flour
½ cup Marsala wine
1 ½ cups chicken broth
salt/pepper to taste

In drippings from pan used for the chicken, sauté onions 2-3 minutes then add garlic and mushrooms. Continue cooking until the mushrooms are tender but not browned. Remove the pan from the heat and stir in the flour. Cook about 1 minute, whisking constantly, then deglaze the pan with Marsala wine. Add chicken broth and cook until thickened. Add chicken or pork to the sauce and simmer for about 10 minutes and serve.
