Here is the recipe as I wrote it, while my friend actually made it. His mom came to Canada in the 60's from Italy and it is her recipe with a few twists from him.
1 egg
1 lb gr beef
1 lb gr pork
1 1/2 c bread crumbs (I use fresh if I have them)
3/4 c grated romano cheese
Italian seasoning, 2 tbspn
Garlic and Herb seasoning(Clubhouse brand) 2 tbspn
Roasted Garlic and pepper seasoning (Clubhouse) 2 tbspn
dried parsley
Mix the above, the texture should be firm and fairly dry to hold together easily.
Take rouladen cut steak (thinnly sliced steaks) stretch them out a bit, take a small hand full of the stuffing and roll it up (like a cabbage roll) tucking in the sides to make a nice tight roll. Place seam side down in a baking pan, drizzle with lots of olive oil.
Broil at 400degrees to brown them, turning maybe once or so. Then toss them into a big pot of homemade tomato sauce to simmer for at least 1.5 hrs.
(Any left over stuffing is basically meatballs, cooked the same way)
My DH loves this stuff, he calls it meat wrapped in meat!
