What did I do to my cookie sheets?

I always put them in the dishwasher. But this might be the first time I've used JetDry with them. I also used a new detergent - Palmolive Eco Gel = where I usually use Cascade gel.

Two of my cookie sheets came out like this! I'm wondering what the culprit was so I don't do it to my other ones - and is there any way to fix it?

It looks like your new detergent doesn't like aluminum.

I suspect it's either the detergent or the rinse aid.
An SOS soap pad will make them like new again.....but the discoloration won't hurt the cooking properties.

Glad it worked out for you. After you've had a chance to try both styles, do post back your impressions. Based on info from Vollrath's site, the 68371 "bun" pans (jelly roll style w/ four raised sides) are the same gauge aluminum as the 68085 sheets. The raised sides **shouldn't** make much difference in baking quality, even in convection mode. The CI article tested one jelly roll-style pan in the issue #74 article. It was a WearEver Commercial pan in tinned steel. The only dun seemed to be the fact that it had four raised sides -- CI felt it was easier (& resulted in more intact cookies) to remove liner sheets (parchment or silicone) when the long sides of the sheet are flat, like on the #1 rated Vollrath. Otherwise, the baking & durability ratings for the WearEver were the same as Vollrath -- three stars.

I have two plain, uncoated/unanodized aluminum half-sheet size jellyroll pans (with the 1" lip). I'm on my second set in 40 years. Both were purchased from restaurant supply stores; we live in the SF Bay Area so there are half a dozen to chose from. I hardly ever bake cookies, LOL, but I use these all the time - at least twice a week, sometimes both at once. Everything from roasting 3 lb. of asparagus to oven-baked breaded chicken thighs, or roasting raw pine nuts to store in the freezer for salad topping. I have one "open" smaller cookie sheet (the kind with sides that slant upwards, but open corners) in a lighter weight that is easy to grab and works well for 'holding', such as draining bacon on paper towels and keeping the strips warm in the oven. I also have a new Circulon non-stick 10x15 pan, very heavy weight, that is perfect when I am sear-roasting steaks. I heat the sheet pan up in the oven until it's sizzling, then sear the steaks on the stovetop. Finish them off in the oven, and they're perfect. I have carpal tunnel, so I use the above technique in lieu of a cast iron pan, which is too hard on my wrists to lift easily.

Put some water into a liquid measuring cup, make a cookie the size you like it, drop it into the cup and note the displacement. I have various dishers from a restaurant supply store and from other random stores. While I use them for several things like portioning meatballs, pancake batter, etc. I find them fairly unsatisfactory for cookies - at least chocolate chip cookies. Reason being, the thick batter is too much resistance for the "sweeper" and I end up skipping gears. I would not recommend buying one without having one in hand to perform a simple test: Pinch the sweeper tightly with one hand and give the handle a FIRM sqeeze with the other. If that skipped a gear, so will cookies, cold ice cream, etc. INOX is the brand I got from the supply house. The others don't say, but the design is identical.

The link below will give you what you need. I'd suggest cooling the brownies for an hour (or completely cool) then freezing them for an hour before you remove them from the pan via the foil. The brownies will cut better if they are frozen. If you happen to have a roll of Reynolds Wrap RELEASE Non-Stick Foil, this would be a good time to use it. thank you. I will try one of the others - with cascade and rinse aid and let you know if it's the palmolive or the jetdry.

well I'm reporting back. I washed one of my other ones with Cascade and jet Dry and it's fine.

So, it has to be the Palmolive Eco dishwasher gel. It might be better for the environment, but not so good for cookie sheets.

Cascade cleans better anyway. I read on an appliance forum that Palmolive Eco gel is actually not as environmentally friendly as one might think. Still has lots of chemicals, I think. Environmentally conscious people usually buy Seventh Generation, but I'm not sure how well it cleans and it's expensive.

For me I use Cascade Complete... I'm enviromentally conscious by not pre-rinsing the dishes and letting the machine do its job, and by using a detergent that gets the job done right the first time.

I just use the cheap stuff I get two boxes at a time from Sam's Club and it works fine, it's powdered stuff if that helps, LOL.

I have one roasting pan that looks like that but I just use it anyway. Even a Brillo pad didn't take the discoloration off but I figured if it didn't come off with Brillo it probably wouldn't come off in the food!
