What is the shelf life of soy milk and should it be refrigerated. I noticed in the store, they are displayed unrefrigerated by the fruits.

Hi,
Soy milk can remain unrefrigerated until opened. Then I believe it has the same life as regular milk. It doesn't last that long in my household as most of us have a blood allergy to dairy products. They make yogort now that you swear must be made with real milk it's GREAT!!

Try Silk soy milk. It comes is in the refridgerated section of your store. I can find it at Kroger and Albertsons, but don't kown how widely available it is. This stuff is great. I buy the vanilla (they have plain and chocolate(also great)too). I drink every morning with fronsted mini-wheats. I'm sure that sounds mundane to some - but give it a try!!

Do they sell Lactaid or other lactase-treated milk where you live? It's a lifesaver. If you drink some of that milk, then you can have other dairy that would normally bother you. In your recipe, if you used a lactase-treated milk and real cream, which is naturally low in lactose, then you should be okay. But some people are more intolerant than others and your mileage may vary. You can also buy the lactaid pills.

SOY MILK (FROM SOY BEANS) SOY MILK AND BASE SOY MILK (FROM SOY BEANS) 1 cup soybeans 3 cups water 5 to 6 cups warm water pinch of salt 1 Tbsp. honey Soak 1 cup soybeans in 3 cups water for 24 to 48 hours. Pour off water in which beans have been soaked. Grind beans until fine. Add 5 to 6 cups warm water and boil for 30 minutes. Strain add pinch of salt and 1 Tbsp. honey. This milk can be used exactly the same as cows milk. . Don't use soybeans that are used as seed, as they have been sprayed. Use the ones that are harvested out of the field. or, another approach; SOY MILK AND BASE 2 cup water 1 cup soy flour 1 tsp. sea salt (or regular) Blend or stir until smooth. (After cooking, base should be custard like.) Bake at 350 degrees for 35 minutes (stir after 20). Or crock pot on low for 3-4 hours stirring. May be frozen. MILK: 1/2 cup soy base 1/2 cup water (plus 4 c.) 1 tsp. vanilla 2 Tbsp. sweetener 1/4 tsp. sea salt (or regular) 1/3 cup cashews Blend all but 4 cups of water until smooth. Add water. Chill and shake before serving.

Cream Sauce With Herbs and No Dairy Submitted by: Kathleen Amos-Robel Makes 5 servings " This recipe is great over pasta, and provides a flavorful vegan alternative to traditional cream sauces. " Ingredients 1 (8 ounce) package silken tofu 1 1/2 cups soy milk 2 tablespoons soy margarine 2 tablespoons minced garlic 1 tablespoon nutritional yeast 1/2 teaspoon paprika 2 teaspoons dried dill weed 1/2 teaspoon salt-free herb and spice blend 1/4 cup water 1 tablespoon cornstarch 1 Crumble tofu into a blender or food processor. Puree briefly, then add the soy milk, margarine, garlic, nutritional yeast, paprika, dill and spice blend. Process the mixture until it is smooth. 2 Pour the mixture into a medium saucepan and cook over medium heat until it comes to a boil. Combine the cornstarch and water, pour into pan with the sauce. Continue cooking over medium heat until sauce has thickened, about 1 minute. Remove from heat and allow sauce to cool slightly, adjust flavors to taste and serve over pasta or roasted vegetables. My husband has 'periods' of lactose intolerance but he hates the taste of soy milk (even vanilla soymilk). You might want to try rice milk. The brand I purchase sometimes is called "Rice Dream" and Jim really likes it (you can get it at Trader Joes'). It doesn't have that 'beany' taste you sometimes get with soy milk.

And I agree, once it's opened, stash it in the fridge! It tastes MUCH better cold anyway!

Check out Darifree, supposedly it's the best tasting milk subsitute. made from potatoes.

Silk soy is the best!! i am addicted to it... i actually have it in place of a snack most of the time. and every morning for breakfast I also buy the Vanilla and the Plain. I actually have been telling my friends about it... and i dont usually get excited over such a small thing, but the Carbs are relatively low, and the protein is higher than regular milk and the non-lactose milks.... I use Silk soy with everything that calls for milk.
