How Much Wine?

I'm helping host a party for about 60 people. It's an after dinner party with appetizer type foods. There will be beer and one specialty drink -- maybe a margarita. There will also be wine which I'm in charge of. How many bottles do you think we will need and what specific kinds (Shiraz, Chardonnay ???, etc) would you get? Thanks.

How long after dinner? How long will it last?
I know this is a personal question, but how sophisticated is the crowd? I am trying to figure out how many will be drinking wine compared to how many will be drinking beer.
And do you have something to do with unopened bottles?
I would figure 1/2 a bottle per person and I would make it simple and buy 2 kinds, red and white...and I would buy Australian for both. Depends on what you have available but black swan is a decent wine...and I would get a merlot/shiraz as wwell as a Chardonnay.
You will have wine left over....but...as someone near and dear to me always said..."Better too much than too not".

I'm not really sure of all of the specifics yet because someone else is the main host. The crowd is a 30-something mainly white collar professional type group but I wouldn't call them overly sophisticated.

I would think most of the men (about 30 people) would go for the beer (there will be a very extensive selection of beer), and I would even think some of the women may drink the beer. I am thinking most of the other woman may go for the specialty drink... I think it will be a margarita or something similar..but I'm not in charge of that, and if it runs out, I would bet wine would be the fall back drink for them. Of course they'll be a few that won't drink at all (pregnant, etc). So generally, I would guess I would have a medium to small group of women (8-10) and maybe a couple men drinking the wine.

The main host told me just to get a couple bottles, but I'm thinking I should bring way more. And, I just sort of guessed Shiraz and Chardonnay...are those the right two to use; are there better choices; is there a third kind I could add?

Do realize that the yeast actually ingest the sugar and release alcohol and CO2. Hence, the sugar will be depleted. If you make this wine dry, there will be very little residual sugar left-- much less than that which was originally in the fruit. Personally, I would go with the first recipe, but maybe use around 4 lbs. of elderberries per gallon. Elderberries can be quite tannic and 10 lbs per gallon is a lot. You don't need to choose based on amount of sugar because both are going to ferment dry. In other words, they will both have the same amount of sugar in the end (almost none). I also suggest you get a hydrometer. It is better to add sugar based on hydrometer readings than just dumping some amount in per a recipe. You can also be assured that the sugar will fully ferment (leaving almost no residual sugar) as you'll know it is within the yeast's alcohol tolerance.

Petaloid...nothing special that I have seen, other than a day out with the family and a good meal, perhaps of fish or roast beef or pork. The sort of meal where kids and grandparents all go along, everyone dresses up a bit and they're generous with what they order, including desserts and drinks. There is a special round pastry called "RoscÃ³n de Reyes" which I believe is known as "King's Cake" in USA. It's a round light pastry decorated with sweets and a golden crown. of one, cut through the middle and stuffed with whipped cream. This is usually eaten at home with coffee or breakfast. SharonCb

Mary Jane - Glad you found my post about the wine/chocolate in the Napoli granite. I hope it helped. You could choose the Napoli and still go with chocolates/creams/whites/rusts/steely grays. My cabs are white, stainless appliances, napoli granite, brushed nickel hardware, latte/chocolate/beige flooring, rust/brown pendant lighting. Have you posted any pics of your remodel? I am absolutely glad I didn't see the wine in the granite at the granite shop - I might not have chosen the granite. My kitchen sort of flows into my den - we have peeled the fruit wallpaper and have painted the walls the same as the den - Olympic Pony Tail is the color. I still haven't chosen a floor yet, but am hoping to be able to afford a mid-grade vinyl sheet flooring next month. I really would like to get the chocolate/latte colored SnapStone and have a nice tile floor - it's about $5-$6 per square foot I think (maybe a fuzz more). Congoleum and Armstrong both have some really nice sheet (luxury and regular) flooring that I am looking at too. My kitchen hasn't gotten much further than the pics I have posted - we did finish painting the walls and I have found curtains (we have a harsh beating summer sun through double windows so I chose some insulated curtains). I am not totally sold on curtains and may get the fruitwood lined blinds at Lowe's for like $35 each. Lots of unfinished decisions. :) Once we get the cabinets painted and the flooring down, I will upload more pics. I want something medium-dark so that I am not cleaning every day and I want something that doesn't draw the eye down - the granite deserves to steal the show. What is down currently is just rental grade green marbled looking vinyl - I hate it other than it is dark and doesn't show dirt AT ALL. Our house is an old brick ranch and has oak floors throughout - I have even thought about just finishing out the kitchen in the oak flooring. It is a little darker than the honey oak color you have. Regarding the stainless appliances - I think it took about 18 months for us to finally purchase them all. I bought one every few months depending on sales and discounts ~ they are all stainless and the handles all match, but the brands are different and not from the same line. I used to care about everything being perfect years ago ~ but now I'm just glad to buy something practical and what I like since I have learned that is more important than a matching suit of brand name appliances. :) I will post more pics soon. Forgot this...

I would 'guess' the party would start around 7:30 and go until 11:30 or 12 or so. Appetizers will be very heavy.

I should be able to get rid of the unused bottles over the Holiday season, so I'm not too worried about that.

I think you are dreaming about how many people WON'T drink wine. Unless it's a different crowd than I am imagining, I would guess about half will drink wine.
I would have 10 bottles of white adn 8 bottles of red....and yes Shiraz/Merlot is a good suggestion as is Chardonnay or Sauvignon Blanc.

Specialty drinks are a big fad thing around here now. I think Oprah had something to do with it -LOL. And, surprisingly a lot of the women here drink beer. Just last night I was at a woman's only party with this group and only beer was served...at least I don't think wine was served since I didn't see any. I'm not sure if it's an age thing, or a regional thing, but wine has never been that big here...only for smaller dinner or intimate type gatherings. We are in St. Louis and home to Bud/Anheuser Busch so maybe that has something to do with it.

I'll get plenty of wine though just in case. Thanks for your suggestions.
