not a "dish" per say..but all three of mine love this..

softened cream cheese smeared into a pie plate, a can of chili over the top, grated cheese...heated in the micro or oven...set it in front of them with a bag of tortilla chips and they go at it!

We make kid-sa-dillas, take a tortilla slice up hot dog "coins" all over it and put american cheese slices on top and it's a kid pizza :)

English muffin pizzas! Toast an English muffin, spread it with tomato sauce and pile with cheese. Let the kids decorate it with whatever toppings you can find in the fridge (that they will eat) and put them (the pizzas, not the kids) under the broiler or in the toaster oven to melt the cheese.

I block of cream cheese in the crock pot, pour over a can of Hormel beanless chili, and add a cup of grated cheese. Use as a dip when all melted.
Sounds too simple to be good, but we all love it. (Although adding some hot sauce might help a little)

Not really a recipe but - I used to love eating a fried bologna sandwich with mustard on soft white bread.

Microwaves make it so much easier for kids to make their own meals, don't they?

Ok - take tortilla chips, put on a microwave safe plate, sprinkle shredded cheddar cheese on top of them and nuke til cheese melts...... takes seconds. Watch it.

Love the fried bologna sandwich!!!!!!!!! Ate that all the time as a kid and I dont care I love Kraft Mac n Cheese yes with the powder packet it flashes me back to sitting on the couch after school watching I dream of Jeannie and the Brady Bunch!

Ashley also loves fried bologna, but she wants Miracle Whip and it has to be on white bread. She also does the chips and cheese in the microwave thing and uses the chips to dip into guacamole or just with salsa and sour cream.

Makayla and Bud make pizzas with English Muffins too, or with bagels, whichever they have.

They both like hot dogs sliced down the middle about half way through, stuffed with cheese and wrapped in crescent roll dough.

It's funny, I do not eat hot dogs except an occasional Koegel Vienna which isn't really a hot dog (that's my story, anyway). I don't like homemade macaroni and cheese so I sure never eat the Kraft stuff, but I'll eat that cream cheese, chili and velveeta dip. Go figure...

My DH used to make a dip from chorizo, cheese and salsa.
We would put a BIG bowl of that in the middle of the table with a couple of bags of chips and all 6 of us would dig in.

Nachos for a crowd: Chips spread on a cookie sheet, cheese, more chips, more cheese, browned, ground beef, olives. Pop the whole thing in the oven until cheese is just melted. Serve with salsa, sour cream, tomatoes, green onion, etc. (I still like this...).

Fried SPAM sandwiches were popular as a kid as were fried potatoes and hot dogs.

On a rare occasion, I'll still make a fried hotdog sandwich!
Sometimes it's perfect!

Rachelelen, I love the English muffin pizzas. I will make a double batch and half bake some of them and store in freezer, a quick lunch or supper heated up in the oven.

Ar our house I will make a huge batch of homemade macaroni and cheese and the kids will have it for lunch during the week. Makes it easy and we can have hot dogs, sandwhiches or what ever with the mac and cheese.

Another favorite is borrowed from a friend. Cook up 2 cups of instant rice in microwave. Heat up a can of chunky soup. Serve the chunky soup over the rice Dh likes a dash of soy sauce on his.

Dh comes home from school for lunch each day so it helps to have some quick and easy meals. I usually try and make extras of each meal so that we can reheat for a quick lunch.,

I used to make this a lot when I was a full-time working single mom...ok, I confess, I still make it occasionally. I've always called it Hamburger Stew. Should be easy for kids too if they can brown beef...
Brown ground beef(or bison or venison)in a large pot. Toss in a few peeled, diced potatoes and just cover with water. Bring to a boil, turn down and simmer until potatoes are tender. Add a bag of frozen mixed veggies(or a couple cans), a can or two of Cream of Mushroom soup. Cook a little longer to heat the veggies and incorporate soup. Season to taste. This is good over fresh biscuits or toast.

I haven't made this in forever, but it was the first "meal" I ever learned to cook on my own, I was probably 10yrs old. Brown 1lb ground beef in a skillet and dump a can of the Chef Boyardee's canned spaghetti over it. Simmer and stir until the spaghetti is heated through. To make it extra special we would add green peppers and serve it with buttered/broiled english muffins.

We just had "dinner"...crisped up some corn tortillas..my 9 year old was actually doing with supervision..

I had some left over pintos and ham that just got "refried"...little bacon grease, beans...potato masher..heat through..

He also grated the pepper jack....and ripped up some leaf lettuce...

Yummy easy filling...

My boys do the "nuked" nachos all the time..I do make up a few pounds of taco meat and have in a container...my middle one will heat up a 1/2 cup of that in the micro, sprinkle on some cheese and eat it with a fork...even though there is ALWAYS tortilla chips in the pantry.
