Roasting Chestnuts?

I'm interested in how you roast chestnuts.

A couple winters ago, my daughter and I experimented. We tried different ways of cutting the skins, soaking the cut chestnuts in plain or sugared water, and roasting in the oven vs broiling vs grilling over charcoal. We concluded that a simple slice across the shell, a half hour soak in plain water, and a slow grill over charcoal worked pretty well. I ended up manning the roast chestnut stand at the kids' school and sold a couple hundred $ worth.

Not perfect, though. About 7/10s of the chestnuts were nicely moist with just the right touch of char, the rest were defective in some way - mostly by being dried out. It was a pretty labor-intensive process, too - turning and sorting the chestnuts to get even roasting, reloading the charcoal, picking out the failed nuts.

Now we're trying again. I've decided to try steaming the chestnuts then finishing with a very hot roast, The hope is to get a higher ''yield'' with less work.

While my chestnuts steam, I wanted to ask if you guys have any favorite ways of roasting these nuts? I may have asked this last year, if so please forgive this second trip to the well.
