acidic taste after reducing jarred tomato sauce

I was out of tomato paste and thought I could just reduce a jarred tomato sauce to thicken it. The sauce was tomato, parmesan, and basil. It tasted fine before I reduced it, but I couldn't believe the acidic taste that occurred once it had reduced. It was very strange, as I would think the opposite would happen. I wonder if it was the preservatives that cause this? After this, nothing seemed to save it. I tried adding sugar, salt, even garlic (I was getting a little desperate!) What gives?
