Sorry about calling Woodie2 a "Dude" if he is actually a woman (I should have said "Dudith"), I just assumed "Woodie" was a guy! Rule #1 that I seem to keep breaking is "Never assume anything".

I definitely made cornbread, no decent bowl of chili would be caught "hot" at a dinner table with out it barnmom, LOL!

This is without a doubt the best chili I have ever been able to make in my life!
As the evening wore on I did add another can of tomatoes & chilli's. Heck I'm going to have it again tonight for dinner.

Woodie2, if you happen to read this, my deepest thanks to you! It was a simple recipe as I requested, but the combination of ingredients turned it into a "FAR Cry" of just another simple recipe, Outstanding chili.

Wow - what a surprise to see this thread, LOLOL! Yeah, I'm a girl, Changeling! (Well, truthfully nobody's called me a "girl" in many years, haha, but I'm definitely of the female persuasion! My name Woodie is the "handle" I use here and it came about because of the old wooden boat that we own and love - our woodie.)

I'm glad you enjoyed the chili - it is a simple and basic recipe but we like it and have Craig Claiborne to thank for it. Here's the recipe, Coleen.

Chili con Carne
Here is my standard recipe which is an adaptation from Craig Claiborne's low salt recipe from a People Magazine celebrity cookbook from the 70's.

1 tablespoon oil
1-1/2 cups chopped onion
1 cup chopped sweet red pepper
1-1/4 pounds ground turkey
2 tablespoons minced garlic
3 tablespoons chili powder
1 teaspoon ground cumin
1 tablespoon dried oregano
1 teaspoon dried basil
1 bay leaf
1/2 teaspoon ground black pepper
4 cups fresh or 2 pound can diced unsalted tomatoes (I like fire roasted)
1 tablespoon red wine vinegar
1/4 teaspoon dried crushed hot pepper flakes
(optional 1/2 cup red wine)
Canned kidney beans or black beans or white beans, drained (optional)

Heal oil in skillet and cook onion and pepper til wilted.
Add meat and brown.
Sprinkle the meat with garlic, chili powder, cumin, oregano and basil. Stir to blend. Add bay leaf, pepper, tomatoes, vinegar, hot red pepper and wine (if using).
Bring to a boil then lower heat and simmer for one hour, stirring occasionally.
Add kidney beans during last 15 minutes (if using).

Yep, Woodie is a dudette and I'm proud to say a good friend of mine! Not only a nice person, but has great recipes too :)

Around here the kids would call you Dudith, guys are Dudes, you figure it out, LOL.
However I'll always refer to you as my friend Woddie2 who makes some dam great chili !

I didn't add the red wine vinegar (didn't have it).
I used in addition another can of chili's and tomatoes, it started getting a little to thick for me.
I used black beans ( out of pintos/kidneys)

I put in some cayenne near the end to kick up the heat a little, I think that was it, the basic recipe is all "WOODIE2", thats how it is in my cookbook I'm putting together and thats how it will stay!

I don't think any of these changes affected the basic recipe at all, it was simply a taste as you go type of deal witch I was told to do here by the experts!

There is one problem, it's taking so darn long to heat it up for tonights dinner, LOL,LOL.

Around here I am known as "hella-strict-hot-dude-mom." I could explain but I'll let it go...

Changeling, I also broke your first rule of not assuming anything and assumed you were a woman at first. I have to say that I read your posts differently after I found it otherwise, and I wonder why this should make a difference. You reminded me a lot of my niece, who (now that I think about) cooks like a man (I hope she doesn't see this!).

Woodie's recipe does look good. The fresh red bell pepper will give it more of a fresh chili flavor, since bell pepper is a type of chili.

I used regular hamburger, I think ground chuck might even be better but didn't have any.

Publickman, like my mom used to say "you have to eat so you might as well learn to cook it right", seems that applies to man or woman.

I too am a fan of Woodie's Chili, and Woodie, AKA Ann! When I first got here I thought maybe Woodie was a man because I had grown up with two boys names Woody, which was short for Woodrow. At least that was what I hoped was the reason for a man having the online moniker of Woodie. Then, being the biologist that I am, I thought perhaps the mysterious Woodie had a fondness for woodpeckers. That's what all my birding buddies call them. Or perhaps Woodie was a carpenter? Then, I met the wonderful Ms. Ann myself, and found out that woodies are wooden boats, which I think is SOOOOO cool!

Hi Lpink! How funny this is to me - I still could kick myself for choosing a silly name like Woodie instead of just using Ann or Annie, LOL. I don't know what I was thinking back then, I guess (in my inexperience on the net back in 2002) I thought that I had to be incognito. Little did I know that eventually I would spill my entire life story, bit by bit, on this Cooking Forum for the whole world to read!

Anyway, its just always nice to know that someone enjoys a recipe and is nice enough to post about it, thanks Changeling!

Woodie, quick story. I finished off that first pot and made another. My neighbor came by while I was cooking it (almost finished) said he could smell it and wondered what I was ruining now, LOL!
I told the truth (some people still do that) and told him it was called "WoodieChili". I gave him one of those cheap disposible containers full, you get at Wall mart and told him to give it to his wife and see what she thought.
Evidently that package of chili never saw his wife, LOL, because later that evening she showed up and said (non-nonchalantly) that **** wanted her to make some of the Woodiechili.
I knew right then and there what was going on so I just said I didn't know if I still had the recipe or not and would check when I had time. Now before you get all carried away remember she has laughed at my cooking for several years now, I WANTED TO GET EVEN, LOL, (even though she is a super cook and friend)!
So, I just didn't call! Yes I know, insensitive and COLD, but fun!
This morning she called/came over and I gave her the printed recipe with those insignificant changes I had made and I figured that was it!!
About an hour ago she dropped by with a container of cornbread and the recipe, which I had asked for politely about a million times! I have a feeling "Woodiechili" is going to change my life and neighborhood. These ladies are very completive in there cooking.
