Comments (25)I think you've confused posts. I mentioned scalding to inhibit protease. Cake yeast is essentially 100% "alive" (as long as its fresh). It will provide a consistent even-paced rise and for that reason some bakers prefer it for any long-rising dough. Other bakers have switched to osmotolerant yeast for long-rising "rich" doughs. (i.e. SAF Gold designed for high sugar breads and acidic sourdoughs). Some can detect a difference in the flavor between cake yeast and dry yeast. Others don't. Active dry yeast is a live culture surrounded by a "cocoon" of dead spores. This increases the shelf life and is why ADY has to be hydrated in water before use. Instant yeast is freeze-dried; live cultures are coated with ascorbic acid. No dead cultures and you don't need water to hydrate. Rapid-Rise yeast is a different strain. You get speed but it comes at a cost in flavor. It produces more CO2 and doesn't release the alcohol and water soluble elements in the flour as well as slower yeasts. Comments (70)I recently purchased bilateral hearing aids from Costco.....loved that the hearing specialist is not on commission and that I can try them for 90 days and get a full refund if not satisfied. I tried getting aids thru the audiologist and the price was $6000. For the newest technology and comparable aids at Costco I paid $2000. I love them and cannot imagine being without them.....and I have only had them for ten days. I go in Monday for a recheck and will have some fine tuning done is necessary. I have also had really good service from the optical department. Comments (16)I tried the Chicken Tikka Masala on my last trip and have to say it was pretty darned tasty! I will be stocking up on that next trip. The pumpkin ice cream is really, really good but we bought the decadent chocolate ice cream....*swoon*. I enjoy a lot of their seasonal products and wish some of them would be regulars (that's right....put those truffles out all year round!!). My list of likes at TJ is pretty long (and some of it is on that Chowhound link). I only buy their frozen veggies any more (mostly haricort verts, roasted sweet corn, brocolli) and various frozen stuff (mushroom turnovers!!). Comments (21)Don't have a BJs (*snort* *snicker* *chortle*) near us; don't like Sam's and the closest Costco is 2 hours away. We have a Costco membership and try to make it there every couple of months. There are seasonal items that may also be regional so I'll refrain from commenting on them but there are some great products to be had. Christmas goodies are starting to make it out and they have some fantastic treats for holiday parties. Their meats are good; high quality beef. Veggies are pretty good but limited selection. I can get 24 ounces of mushrooms for $3.49. 16 ounces at Kroger or WalMart (shudder) runs $3.29. There are some dry goods that I buy (Goldfish, Kashi GoLean cereal, dishwasher detergent, trash bags, various cleaning supplies, bottled water) where I can get two to three times the quantity for less than the normal retail stores. I'm fortunate that I have the space to store things. I keep a fairly well organized closet for my bulk items and rotate stock frequently. Their return policy is great. I bought a pair of sandals, wore them once and didn't like them. No questions asked; money back right there. Same with a book I bought. Turned out we had already ordered a signed copy. Brought it back with no hassle. I'd recommend Costco in a heartbeat....See Moreginger_st_thomas
