RECIPE: looking for classic chocolate truffle receipe

Does anyone have a classic chocolate truffle receipe using heavy cream? I have seen some that use evaporated milk, but I understand they don't have that "melt-in-your-mouth feel.

I want to make some gifts for my office workers, and want package them in pretty satin covered boxes that I seen for a buck in Michaels Arts and Crafts store.

I made these for a chocoholic friend's birthday & she loved them. Bookmark this site as I've never had a bad recipe from it.

I am less skeptical then others, perhaps. The most important thing in my mind is that the truffles will be brown, not green. Avocado has such a fatty taste that I think it would work. It might be one of those things that no one would ever guess what the heck is in it. Jo

I was less interested in the full recipe rather than the replacement of the dairy. I've been making Mendiants like this, HERE And now have some molds to make this, HERE Free form was good but molds give me more control. I have every nut, seed and dried fruit available. So I make variations even crispy wafers and puffed rice...(think kit-kat and those crispy bars) Our annual charity sale is Wednesday-friday so all is done for that. Just thinking ahead for Valentines day.... Truffles without dairy sounds interesting to add to the bag. Celophane bags and they are wrapped in those thin foil squares. 10 to a bag. I do like a bit of sea salt but not much. (it is overdone I agree) . My chocolate and my tahini does not have salt. I personally would not add any salt just a light finishing sea salt since I make my own salt. (A friend co-worker has bees and gave me a big block of beeswax that I used in my hand and lip balm so it adds some personal notes). This is my re-called tahini. One company makes a dozen labels, who knew ?!.Opened and has been in the fridge for a few weeks....obviously fine since I've been using it. I'll try a small batch for the holiday party.

So interesting how a little bit of this or that...or none at all...can make a difference. Years ago I had a request to make a lot of decorated sugar cookies for an event. I was so frustrated because my TNT recipe was NOT working. The cookies were spreading like crazy in the oven. I was pretty frustrated since any/all advice I got from those I thought could help were all tips I already knew. I'd even sent an email to Shirley Corriher. Plus, I'd made the cookies a zillion times. Finally, a caterer I knew asked about my baking sheets. I'd bought those insulated "air-bake" cookie sheets and was using them. Never even thought about that and no one else had asked. She told me to go back to my faithful non-insulated, heavy-duty aluminum pans. She said the insulated sheets heat more slowly giving the cookies more time to spread. Problem solved! I've since had others tell me they don't have the spread problem with their insulated sheets. IDK...could be it was just the brand I'd bought but they're long gone.

😂. Well at least the play-by-play has been entertaining. And forced me to brush up on keto and paleo if my sisters flies in to meet us at my parents. She is on the 'a-la-carte' diet. Different every time I see her. I call it the yoyo. The 'you-are-on your-own' diet since I can't follow the various changes and now her recent husband is muslim. Fortunately we will be at the beach so no pig roasts, lol. She is mostly raw. Bummer if I am requested to haul my commercial blender.... I did print out a couple truffle recipes and one based on a reese cup using powdered pecans or almonds....but knowing the timing and packing involved, I'll just take a jar of nut butter and some good chocolate bars from WholeFoods. She travels with her own pillow case, lol. So nice to be visiting again!

Oh my, they both sound good. I have no doubt that Alton's recipe is incredibly delicious (being that it is Alton's recipe and the number of 5-star reviews at the site), and the one at the site Ginger posted sounds very good too. Ginger, I've been to that site a number of times and finally bookmarked it this time. Every recipe there looks wonderful.

Thank you Lindac and ginger, I printed them out, they sound exactly what I am looking for! I will do one set in the bittersweet and one set in the semi sweet chocolate, I think this will be a yummy Christmas gift.

Wow! I love the recipes. I was searching for truffle recipes and these are great. My daughter and I are thinking about starting a small chocolate candy biz and are looking for ideas.

Here is a great quick recipe we use.

Crush 1 package of Oreo cookies in the food processer.
Soften 1 8 oz package of cream cheese and add to cookies.
Roll into balls and refrigerate for about an hour.
Temper milk or dark chocolate and dip.
Let cool and keep stored in refrigerator.
They can also be rolled in cocoa, powdered sugar,chopped nuts,coconut, etc.
