Quick Potato Corn Chowder~sprinkled with Penzey's Smoked 4S.

Here's what I did.

Quick Potato Corn Chowder

2 medium size russets, peeled and cubed

2 handfuls of chopped carrots

1 large garlic clove sliced

1 c chicken broth

enough water to cover the veggies

little s&p

Simmer until potatoes and carrots can be smashed some.

Smash veggies, do not drain.

Toss in two handfuls of frozen corn.

1 c half n half

taste, add more s&p simmer a bit longer to cook corn and finish off the potatoes and carrots.

That looks sooo good! Are you making that for just yourself or do you eat lunch with someone? It's usually just me, myself and I and today it was saltines and a hunk of cheese.

Yum, that looks good, Terri.

Like Minsue, I had saltines, mine had peanut butter on them. I ate at Olive Garden yesterday afternoon and spent last night being sick, I didn't like Olive Garden before, now I really don't like it!

wish I'd have had Terri's soup instead.....

Okiedoke, I'm not sure what a groupon is. A girl that a co-worker dated for a while worked there, and he kept telling us the sandwiches were really good so we decided to try them. We'd tried to go there before, but parking is so limited (unless you want to walk a couple of blocks) that we usually couldn't find a place close to park. What's in the West Indies salad? I went out to lunch today, too--with my two former co-workers from the library. We went to a little restaurant run by two friends. My friends had homemade pierogies (I hope I spelled that correctly) and butternut squash soup, and I had a chicken Caesar salad. The salad was unusual in that the chicken appeared to have been pan-fried rather than broiled before it was cut up. It was good, though!

Glenda, I'm 74 and I woud find it amusing if I overheard a conversation like that. We all know people that are 'old' at 60! They walk like an old person, they talk like an old person and they think like an old person. Age is a state of mind. Exercising and keeping active keeps you young. I'm still walking five miles a day or eighteen holes of golf and I know people a lot younger than me that cannot do that. You're doing water aerobics, weights, etc. You go girl. Just laugh it off. Don't you remember when you were a teenager and thinking that 35 was old?

Good old starchy, cheesy, tuna casserole. Even my DD who doesn't care for tuna or peas ate it for lunch today--amazing how a few years of cooking for yourself will change attitudes toward Mom's cooking. I made two last night, and we'll have it again tonight, with sliced tomatoes and yellow squash.

Mindy, it was just for me. I ate a large portion..(shh) and then put another large portion into the fridge for tomorrows lunch.
The guys wouldn't eat potato soup/chowder if I paid them!!!

Thanks Sue, and it's GF... It works by cooking the spuds in just enough liquid to cook them, and roughly mashing them.
