OMG-- Maggie's Deviled Lobster Tails !!

Have to say thx to Maggie for posting this recipe--- OMG it's luscious & even tho we probably consumed our allowed amt of cholesterol

for the next 3 mns , it was well worth it. Going to have to try it again sometime with a seafood medley of scallops, shrimp & crab .

Crafty, I am so glad! It was a new recipe so I was worried! DH loved it - I decided I prefer it plain - LOL. I was thinking the same as you - using the recipe for other seafood. I used 8 ounce tails and it was very filling - we had also made shell steaks. We ended up splitting a steak. Talk about cholesterol! I liked the method of boiling from frozen - I have turned them to rubber before and it is an expensive mistake!

Jankey here is the recipe - it is from Pillsbury Family Christmas cookbook I had checked out of the library.

Deviled Lobster Tails

2 teaspoons Salt
4 (about 10 oz each) frozen Lobster Tails
4 tablespoons Butter
4 Green Onions, sliced
2 tablespoons Flour
1 1/2 cups Half and Half
1/4 cup Cocktail Sauce
2 teaspoons Worcestershire Sauce
1 teaspoon Dry Mustard
1/2 teaspoon Salt
1/2 teaspoon Hot Pepper Sauce
1/3 cup unseasoned Dry Bread Crumbs

Bring water to boil with 2 teaspoons of salt. Add lobster tails; return to boil. Cook 8 to 10 minutes or until lobster shells turn red and meat is opaque. Immediately plunge lobster tails into cold water to stop cooking. Lobster will not be thoroughly cooked, but will continue to cook during baking step.

Heat oven to 450 degrees. Melt butter in medium saucepan; add onions and cook about 2 minutes. Add flour; cook and stir until mixture is smooth and bubbly. Gradually add half and half, stirring constantly. Bring to boil. Cook 1 minute, stirring constantly. Add cocktail sauce, Worcestershire sauce, dry mustard, 1/2 teaspoon salt and the hot pepper sauce; mix well. Remove from heat.

With kitchen scissors, cut and remove membrane from under side of each lobster tail - discard. Remove lobster meat; cut into chunks (reserve shell). Add meat to sauce and mix well. Return mixture to shells. Place on ungreased baking sheet - place small crumbled pieces of foil between tails if they look like they will tip over.

Melt remaining 2 tablespoons butter and add the bread crumbs; mix well. Sprinkle over lobster mixture. Bake at 450 for 10 minutes or until thoroughly heated and bread crumbs are brown.

Yes, I do think my daughter is mulling over the idea of NP , as you mentioned. Plus, she has been around sev. when taking grandson for Dr. appointments. The NP, sees grandson sometimes. I kinda think, my daughter looks up to the NP. They seem to do a lot of talking - I've noticed. So, I guess we will see. If she stays, where she's at - I think she will be happy. She already has a job and seems to have a nice friendship with her boss at the hospital. I really, like the hospital she has chosen to work at. She has been really lucky, so far. She is a really smart girl and has always surprised us. We have come, to always expect huge success from her. She is the best child -I could have ever hoped for. Always exceding my expectations & overcoming any challenge put before her!!! She was the nerd in school and boys were afraid of her smartness, kind of in awe - I guess. lol. Anywho she's the Best! And , okay I am done rambling /bragging for now. So sultry, goodluck with the law thing - sounds like the perfect combo! You can heal someone or ? No, I won't say it! thanks - tina_2

More ideas: CRAB BENEDICT 6 oz. Lump Crabmeat 1 tsp. butter or olive oil 2 toasted English muffins (cut in half) 4 poached eggs 4 oz. Hollandaise sauce Sauté crabmeat with butter. Place poached eggs on top of toasted English Muffins. Top eggs with Hollandaise sauce. Top with Lump Crabmeat. Garnish with chopped black olives if desired. CRAB ROLL-UPS 1/2 lb. pasteurized processed cheese spread 1/2 lb. (2 sticks) butter 1 Tblsp. Worcestershire sauce (optional) 1 tsp. dry mustard, optional 1 lb. crabmeat, picked for shells 20 to 25 slices of soft white bread 2 cups sesame seeds Tony Chacheres seasoning 1. Melt cheese and half of the butter (1 stick) in the top of a double boiler. Add the Worcestershire sauce and dry mustard, if desired. Cool slightly and add crabmeat. Stir until mixture is spreadable. 2. Remove crusts from bread and roll out flat with a rolling pin. 3. Spread the bread with the cheese/crab mixture. Roll up each piece like a jelly roll. 4. Melt the remaining butter. Brush the rolls with butter. 5. Mix sesame seeds with a few sprinkles of Tony Chacheres seasoning. 6. Roll the buttered bread in the sesame seeds. 7. Freeze on cookie sheets. Store in airtight containers. To serve, cut frozen rolls in thirds, and broil about 6 inches from the heat until golden on all sides. CREAMY CRAB SOUP 1 stick of butter 1/2 cup flour 1 small onion, minced 2 garlic cloves, minced 6 cups seafood stock (seafood bouillon cubes and clam juice will work) 1 tsp. Salt 1/2 tsp. White pepper 1 bay leaf 1-1/2 to 2 cups heavy whipping cream 1 (7oz.) Jar chopped pimientos, drained 1 lb. Crabmeat, picked clean of shell 1 Tblsp. Worcestershire sauce 1/2 cup Sherry In pan melt butter, stir in flour until smooth. Add onion and garlic and cook, stirring frequently until golden brown. Gradually whisk in seafood stock, salt and pepper and bay leaf. Heat to boiling. Keep stirring. Reduce heat and simmer for 5 minutes. Stir occasionally, add cream, pimentos and Worcestershire sauce and remove bay leaf. Just before serving, add crabmeat and sherry. Serve piping hot!!

Terri, I love sparkling grape juice and we always have it at family dinners but I did not think to get some for tonight. Ann, I just happened to catch the Barefoot Contessa last week and she made the Green Goddess dressing. It just sounded so good to me...well anything with a c. of fresh basil suits me just fine! This is a very refreshing and just plain GOOD salad dressing. Basil Green Goddess Dressing 1 cup good mayonnaise 1 cup chopped scallions, white and green parts (6 to 7 scallions) 1 cup chopped fresh basil leaves 1/4 cup freshly squeezed lemon juice (2 lemons and see My Note) 2 teaspoons chopped garlic (2 cloves) 2 teaspoons anchovy paste 2 teaspoons kosher salt (see note) 1 teaspoon freshly ground black pepper 1 cup sour cream Salad: 3 heads Bibb lettuce 2 to 3 tomatoes Place the mayonnaise, scallions, basil, lemon juice, garlic, anchovy paste, salt and pepper in a blender and blend until smooth. Add the sour cream and process just until blended. (If not using immediately, refrigerate the dressing until ready to serve.) Cut each head of lettuce into quarters, remove some of the cores, and arrange on 6 salad plates. Cut the tomatoes into wedges and add to the plates. Pour on the dressing and serve. NOTES: I did not add any salt to this recipe due to the anchovy paste. Also, I got a 1/4 c. juice from just half a lemon and a small lemon at that! Michelle
