I bought a fennel bulb

They had fresh fennel in my price range at the grocery store today so I bought a head of fennel. I think I might roast it this weekend with some potatoes, onions, butternut squash and carrots. But what about the leaves, they are so lush! Can I dry it? Any salads using fennel leaves. Tea? Should I freeze?

I might go back and buy some more, so any fennel recipes/ideas would be welcome and appreciated!
