The cornbread debate

I've been away from my computer...cooking all day yesterday. Made my first Charlotte which turned out beautifully I might add. But back to the subject at hand.

I had posted a cornbread recipe that I like.

I like it so well that I'll eat it for breakfast too. And that's saying a lot, because usually once I've had a piece, I'm done.

The question was what is the corn flour that was in my recipe. I have a small 24 oz. bag of Bobs Red Mill 100% Stone Ground Corn Flour. I'm no expert, but it sure doesn't look like corn starch to me. It is a pale yellow in color with a few darker specks in it.

This is what the package says:

Bob's Red Mill finely ground Whole Grain Corn Flour is great for breading in combination with other flours in baked goods.

Try making our favorite cornbread recipe with part or all whole grain flour instead of cornmeal. You'll find your cornbread richer. We mill our Whole Grain Corn Flour from whole yellow corn kernels with all the natural nutrients intact--the germ, bran and endosperm.

Sperm! Well I never! Aw, I get it, that's how the bread grows right? LOL.
