Found recipe - a good one!

Thought I would share this recipe for Mediterranean Relish that I think is very good on crostini or crackers. This may have come from a book called First Impressions, maybe by Betty Rosbottom(?).

Mediterranean Relish Crostini Topping

½ cup olive oil

1 ½ TB lemon juice

2 TB capers, drained

1 ½ t. minced garlic

2 TB finely chopped shallots

½ cup Greek black or purple olives, pit, chop coarse

1 cup loosely packed fresh basil leaves

¼ cup grated Parmesan cheese

s&p to taste

Mix all together in a bowl, tasting before adding s&p. Add more lemon juice if desired. Cover and refrigerate up to one day ahead. Bring to room temperature before serving on plain crostini or pita toasts, goat cheese spread on crostini or on bread slices topped with sliced deli roast beef or tenderloin.
