You need several...like maybe 4. A bitty one for one egg or such for an egg wash, a larger more open one for things like starting yeast dough and whisking flour into a soup that needs a little thickening....and a real balloon whisk for stuff like 6 scrambled eggs, or a merangue or yolks for biscotti.
I never can spell that egg white topping....it always turns out like the dance.

Well I think you can be cheap and get a good one if you buy somewhere like TJ MAXX. Or some close out store that has good brand names at cheap prices. Also, I never wash mine in the dishwasher. I've had my wisks for many years. I just found a HUGE one at a close out store for $1.49, I bought it for making homemade laundry detergent. It's made very well like for a restaurant. OH and also the outlet mall!

I have 4 starting at very small, I use it the very most of all...OH I forgot, I have a Pampered Chef plastic one for making gravy on a non-stick surface...so 5 wisks all together.

Check a restaurant supply store in your area. You should be able to get a good one (and soooo much other stuff!) for a reasonable price.

Since I'm very lazy and hate to dirty any more dishes than necessary, I've found my flat silicone whisk to be invaluable when making scrambled eggs. I break the eggs into my nonstick pan and whisk away! Job done.

The flat whisk is also great when making a roux or anything else in a saucepan. I can get into the "corners" very easily, something a balloon-type whisk would miss.

I love my flat silicone coated one for gravies and sauces.
I have Chantal pots and pans (enameled inside) so anything metal leaves gray marks. The silicone prevents that.

I also have several sizes from the tiny to about 12" long for various other uses like sourdough starter, eggs, homemade yogurt, etc.

I agree with the TJ Maxx (Marshall's, Home Goods) or restaurant supply. Even if you have to spend $4-$10 for a good one, it's worth it in the long run. I'm lazy and run all mine through the dishwasher.

Uhoh....don't have a silicone flat whisk....think I need one!

This is the plastic or nylon whatever...whisk that I have and I have had it for many years.
