I've only prepared mussels a few times at home, but have always wondered the following.

You are supposed to throw out any chipped or cracked mussels, or any that are not tightly closed before cooking, because they may be dead. But will a dead mussel still open while being cooked?

I'm wondering how careful does the pre-cook inspection have to be? Is it not enough that they open while cooking?

The last batch of mussels I made were very slow to close while I was rinsing them. But after a few minutes, most of them eventually closed tight. I was hesitant to cook them because they closed so much more slowly than I had seen in the past. But they all opened when cooked, and they were delicious.

What is more important; the pre-cook test to make sure they close, or is it sufficient to just toss the ones that don't open?
