Baking process question

I wanted to make banana bread but since I lost my recipe box a few moves ago I am always looking for recipes.

I check my one cookbook that has one -

Alton Brown whose process includes

creaming the butter and sugar

Joy of baking website recipe

melt butter, cool and add to eggs (the sugar went into the dry ingredients)

Ive' seen the melt butter thing before but not sure I understand why sometimes its just softened, sometimes its melted and sometimes its creamed.

Does this matter? When?

I like to know the reasons for things so if you see a recipe where say, the ingrediant list or portion made looks good to you but the method seems off....you know what to do.

I guess the creaming makes things fluffier? Is that...appropriate...for banana bread?

I went with Joy of Bakig since it was (1) easier, (2) Alton's used some oat flour which I don't have

The batter seemed very dry so I added a little oil, still very thick. In the oven, we'll see how it turns out. Doubtful it will be fluffy considering the heft of the batter LOL!
