Parcels around birthdays, how fun is that! I have that cookbook and it is a great caning cookbook. It has neat ideas that are perfect for gifts and all the recipes are manageable amounts. I too love that pitcher, and what's not to love about Maple Syrup!

Count me in the group who has been thinking about buying that cookbook. I like the apple pie jam a lot on french toast, Annie puts it in the middle of bran muffins. I have a new recipe for bran muffins that I may try that in. Enjoy!! Hope you birthday was fabulous!! Great job Stacy!!

Oh Ellen, that box was jam packed - I"m so glad nothing broke! How could they mangle it so - in just 2 days...sheesh.

Happy Birthday! I'm glad you like your treats. I looked at the book a few days and then ordered myself one, too. It is wonderful!

These are soooo easy - here is the recipe for the crookies - but I have to admit that I made yours with light brown sugar - but having compared the two - dark brown is better. I also used some semi sweet chips on yours because you said you like dark chocolate.

Crookies - these are that yummy blend of sweet and salty
-----------------------------------------------------

Saltine crackers
1 stick butter
1 cup dark brown sugar
1 bag milk chocolate chips

-Line a baking sheet with foil.
-Cover baking sheet with saltine crackers - laid out side by side
-Melt on med-low heat 1 stick of butter & 1 cup of dark brown sugar until well mixed. (If you used more than a sleeve of saltines - use a little bit more of each - butter and br. sugar.)
-Pour evenly over crackers and spread to edges to cover crackers completely. (don't worry if it seeps between them in spots.)
-Bake for 5 minutes at 350 degrees - it will be bubbly.
-Remove from oven and sprinkle 1 bag of milk chocolate chips.
-spread melted chocolate with back of a wooden spoon.
-Put into refrigerator or freezer until set & break apart into uneven pieces.

Oh Hey - Gina - here is the recipe - it was a good one to try !!

Linda Lou's Apple Pie Jam
4 cups tart apples, peeled and finely chopped
2 tablespoons lemon juice
1 teaspoon ground cinnamon
1/4 teaspoon ground allspice
4 cups sugar
1 cup firmly packed dark brown sugar
1 box pectin
1/2 teaspoon butter
Add water to chopped apples to measure 4 cups. Place apples and water into large, heavy saucepan. Stir in lemon juice, cinnamon and allspice. Measure sugars. Stir pectin into fruit. Add butter. Bring mixture to full rolling boil on high heat, stirring constantly. Quickly stir in both sugars. Return to full rolling boil and boil exactly 1 minute, stirring constantly. Remove from heat. Skim off any foam with metal spoon. Ladle quickly into hot, clean jars, leaving 1/4" headspace. Wipe jar rims and threads. Cover with two-piece lids. Screw bands on finger tight. Process in boiling water bath for 10 minutes.
I agree, Diane, it's a great recipe. If you want a change, here's Nancy's (wizardnm) Maple Apple Jam, my own particular favorite apple jam.
APPLE MAPLE JAM
12 C finely chopped apples (about 6lbs) I used the food processor
6 C sugar
1 C Maple syrup (grade B if possible)
1 tsp cinnamon
1/2 tsp Allspice
1/2 tsp Nutmeg
1/4 tsp cloves
Combine all in a large deep pan. Slowly bring to a boil. Cook to the jellying point. Stir frequently, so it doesn't stick. Pour into hot jars leaving 1/4 inch headspace. Adjust caps. Process 10 min in BWB.
Yields about 8 half pints. I double this recipe and it works fine.
The notes are Nancy's, I'm sure you can tell, since I don't even have a food processor. LOL

Mmmm Mmmmm good! I sampled both the jam and the jelly this morning! Both are really super but I think the apple is my favorite! We consumed about 1/4 of the jar in one sitting, I think that showed great restraint...hehe..!

The apple pie jam is also wonderful on French vanilla ice cream... my first batch didn't set. Now I make it that way on purpose.

Getting your box was really a sweet way to start your birthday weekend. I would love both the apple pie jam and the tangerine lemon jelly. Good maple syrup is always a treat and even after it's gone, the pitcher will remind you of Stacy (I know that because I have a plate from her that I use a lot and always smile and think of her). Somehow "Small Batch Preserving" doesn't sound too intimidating, even to me. I can't wait to see what you try and post from it. I'd love it if you or Stacy would post that jelly recipe, lemon is one of my favorite flavors and we're just coming in to tangerine season.

Plus your first jam, good job, I'm impressed. If you can get Ann T to say she'd eat it, you've done well. Maple is one of my favorite flavors and that pitcher is a really nice touch.

Ellen, I'm sure you're going to enjoy all of this. The jam is good on crackers too, incidentally, if you don't want to wait for toast. Not that I'd know that personally....
