HELP with cookware for Glass cooktop

Comments (2)Take a few minutes (maybe 20 or so) and read this really exhaustive and complete article on cookware. Even if you only retain 20% of it, you'll know far more than the average cookware salesperson. Stainless is a lousy conductor, but you hardly ever find it by itself except in very cheap cookware. Usually there is a disc of copper or aluminum inside the base (and sometimes up the sides) of the pot. This 'sandwich' usually has good performance from the good conducting metal (copper or aluminum) but the surfaces are easy to care for because they are nonreactive stainless. By the way, I find that buying a 'set' of cookware is a false economy; there are usually a few items I never use. Figure out what your budget is, and buy the best tool you can afford for the task you wish to accomplish. I have a mix of black cast iron (for searing steaks), some stainless/aluminum saucepans, some stainless stockpots, some enameled cast iron for braising--all excel at certain tasks, but few of them match. Comments (10)Wow, thanks! Dlm, you make me feel much better & more relaxed! Yes, I did read about the flat surface on the cookware being important, and also that the pan be within the diameter of the ring the encloses the burner. I'm so glad to hear that you are enjoying your stove and don't find it a hassle. Thanks! Caroleah, yes, I think that lifting the cookware rather than dragging it will be of utmost importance. Thanks for pointing that out. Glad your mom has had good results with her stove...no scratches, great! No, not doing the holiday cooking. Will be going to my sister's for Thanksgiving. This is just a step in doing some upgrades to my kitchen. The previous stove, which came with the house we bought 4.5 years ago, was 22 years old. The countertops are coming the first week of December. I'm looking for a fridge, but can't find one that meets all my criteria! Eventually, the right one will come along! Thanks for your reply. Bumblebeez, I did see somewhere that Al Clad was preferred, but wow, I'd prefer a lower price tag on my cookware! That stuff must be great. As you say, there must be cheaper alternatives, but I suppose that AC is the gold standard. Do you find that stainless steel is good to cook with? Is the issue that the ss be heavy to work well? I suppose the the ss pan I saw at Marshalls for $16.99 yesterday would not be the greatest idea? It wasn't *real* flimsy, but I know it doesn't come close to AC of course! What brand are your ss pans? Another issue: I use a wok almost every night (Or I did use a wok. Last two nights we've had chicken salad & pasta salad I made in advance, and sandwiches!) Need to find a flat-bottomed wok...that is stainless steel? Would Calpholon work? That's what my current wok is, but I've had it for over 10 years and it's probably not in the greatest shape, or flat enough in the right places. Thanks so much for the suggestions and information!...See MorePain in the. . .elbow (Plea for lightweight pots and pans suggest
Comments (19)hostagrams, Tell me about that split keyboard. What is it in the design that helps? I've seen them, but kind of poo-poohed them because they were weird. I use a laptop. A Macbook Pro. Love the thing, but I do admit it has created "lazy wrist" in me. Right now I'm typing on my desktop, cordless keyboard and, guess what, my wrists are arched as they should be. Hm. This is a revelation to me. Thanks for bringing this to my attention in a kind of round about way. LOL Regarding dictation, Johnilu, I tried that a few years ago. The problem is method. I'm so used to plotting as I type that speaking out loud is unnatural. Plus, since I write fiction, there is a lot of dialogue, which translates to a lot of "paragraph, quote, Your lips are like a red rose, period. End quote. Paragraph." Just thinking about getting used to it makes me feel a little crazy. BUT, things might have changed dramatically since then. It might be a good idea for me to try it for a few days and see if it's doable. I'll go see if they have a 30 day trial on any voice software. Last of all, the All Clad 5.5 pot. It sounds perfect. Except the price. Way too high for me. Anyone know of any deals that All Clad runs on pots like these? Many thanks!...See Moreginakra
