Wolf AG Range Thermosat problem

I've noticed that my 1 year old 36" AG Wolf Range is taking much longer than my recipes suggest to finish baking or cooking. Has anyone out there experienced thermostat problems with their range? I also notice that it's baking my cookies unevenly. Help.

Yes. I have a 3 month old range that showed up 25 degrees off. I discovered this by purchasing a readily available and inexpensive oven thermometer. Given that you're still under warranty, just call Wolf and they'll replace the thermostat for you.

Are you sure it just doesn't need to be calibrated?

We have had problems. We first purchased a Wolf range in summer 2007, and ended up having the burner issue while oven was preheating/in use that others started reporting during that autumn. We decided to stay with the Wolf AG range, and waited out their research into the problem and eventual fix for it (they sent out two replacement ranges during that time frame; one that was eventually replaced with the one we currently have). Once in a great while, a burner will balk at lighting if we try to light it just as the oven starts up, but it will then light up after waiting a few moments. Since this happens very rarely, we are okay with it. Obviously, if it started to happen with any frequency or regularity, we would not be as happy. The oven floor continued to "tin can" (make loud popping and cracking sounds) long after the break-in period, and after some time, one of the door hinges was not holding the door closed well along one side (allowing steam and condensation to build-up on the outside of the door edge and the frame), so we called Wolf and they replaced both a year or two ago (they had extended our warranty because we stuck with them while they worked on a solution to the burner problem). Despite the issues, we are happy with the range (though I still wish the oven could hold full size sheet pans!). Wolf's customer service addresses issues when they are called, and they send out their own, authorized service companies to work on the range (even sending out a more seasoned/knowledgeable svce tech after the prior tech did not correctly dx or resolve the problems). I was disappointed to hear about the impending redesign. If we ever have to move, my Wolf AG will be coming with me!

I have this range and yes, the front does get warm-hot with high heat baking. Having worked in restaurants I'm used to it and don't see it as a problem. It's limited pretty much to the upper door, handles, knobs and the tray. I don't have any direct experience with other AG pro style ranges, bugt I've read it's a common occurance. You may want to look at the capital precision self-cleaning AG ranges, according to their press releases they've lessened the problem. The wolf is certainly a good range to cook on regardless.

I've had a Lacanche Sully for two years and love it. I have one gas oven and one electric. I use the gas oven almost every night; I brown meat on stovetop then transfer to oven. Works beautifully. I use the electric for baking (although i bake much less frequently). I do rotate my pans when baking cookies. Don't for cakes, though. Round pans must let more air circulate and bake more evenly. Maybe convection option is better for bakers. I wanted a gas oven for roasting, and also wanted an electric oven with broiler, so no room for convection. As for racks, it's true they definitely don't glide! But I find that as long as I don't push them too far back, they're pretty easy to pull and push. It doesn't bug me, although racks that really glide would be very nice. But I have heard that most oven racks tend to get gunked up and stop gliding over time. Don't know if this is true. I do like my french top very much, especially in the winter when I like to do lots of stews, braises, and use my tagine (my latest obsession). When I'm doing a big dinner it's nice to keep things warm on the corners, or toast nuts without worry (heat is much more forgiving). All in all, very very happy with my range. My dishwashers are another story!

Yes, it may need to be calibrated, but again, call Wolf. Calibration requires some work that you probably don't want to do re: warranty issues. Just my advice.

I took your advice, Keitel, and bought an oven thermoneter. My oven tested fine. So now I'm wondering what the heck is going on. It took an additional 5 minutes to finish my cookies and I under cooked a meatball dish after cooking it 10 minutes longer than the recipe called for. I had to crank the oven up to 450 and cook them an additional 20 minutes. What's up with that?!

itsraining - it's possible that your old oven was running hot - every oven is slightly different - you just need to get used to the characteristics of your new oven - also, did you preheat the oven adequately and have you tried using convection - that generally cuts the cooking time of things and cookies should bake more evenly

Thanks for the advice. I'm going to bake a bunch of cookies and muffins tomorrow. I hope for the best. Can you bake several sheets of cookies at a time on 2 racks?

Yes you can bake several sheets of cookies at a time on several racks with convection - they should do fairly well in a gas convection oven but they may not cook quite as evenly as they would in a third-element true convection oven - keep your eye on them.

Am new to the world of Wolf stoves. Just had installed a DF 364 G SS stove (dual fuel - gas cooktop, electric oven). How do you preheat the oven? Select dial to bake and degree and wait? Anyone help!

The AG's have a red light on the front that goes out when the temp is reached. It will go on and off as/when the gas cycles on/off to maintain the set temp. FWIW, we noticed our oven took longer, too, and the calibration checked out fine. It could be the learning curve of a new oven (e.g. old oven running hot) and it could also be going from a 30" to a 36" oven in our case. We suspect that food cooked in a larger oven cavity might take longer than in a smaller oven cavity. Think about it, a slice of pizza re-heated in a toaster oven heats up much quicker than in a regular oven, so it could be the same type of thing. If not, I have no clue.

I know I am going to get thrashed for this but the larger your oven the longer the preheat time. At 36 inches you need at least 30 minutes. That is especially true with gas. Now that everyone had upgraded to a 36 inch to cook their 22 pound turkey for one day out of the year, your preheat times are going to rise. And of course, so is your gas consumption.
