Electric: Can I Stir-fry? and How Easily Do They Break?

Hubby would rather we put in an electric cooktop because they are easy to clean. I've been doing Watt vs. BTU calculations and, assuming I've got it right (Watts x 3.41 = BTU's), I've been surprised at how much less the power is for electric. (We've nixed induction because of the hummmmmming noise.) Can you stir-fry on any electric cooktop?

And, since the potatoes boiled over last night, per usual, would this crack a glass cooktop? How fragile are they?
