What size hood for Cluny 1400

Hello,

We are building a modern home and have decided to go with the Cluny 1400 (gulp). I think it will work well in the space. It will be going in front of a wall of windows...i know. It's the only place for it! Anyway, the hood that works best in the space is a 48" Miele hood. If we only have 5 burners is it OK to just center the hood over the burners? Thoughts? thank you for your advice! Leslie

If you are getting the SS work station on the side then from a technical/performance POV it is ok to center the hood over the burners.

If you are getting the simmer plate with an 18k btu burner underneath then no, you want a 60" hood over the entire range.

If you are asking an aesthetic question and you want answers from an interior designer POV maybe the Ladies in the Kitchen Forum may offer more informed opinions.

Can you please post a pic of this arrangement?

There are a few options that may include vent hoods mounted in the ceiling. Elica has hoods that hang down and look like lights. You can mount them on the wall over the cooking zones or they hang from the ceiling.

You might even want to mix the use of hoods. Maybe a typical style hood over the traditional cooking zones and one of the other types for the other zone. This way you keep your view.

Congrats on your purchase. I hope you ordered from Art Culinaire they are a great group of people that stand behind the Lacanche ranges with tech support and parts. It's better than ordering direct from France. Yes, people do that.

Please post a few pictures of the room to give an idea of ceiling height and overall look of the room for sense of style and mounting possibilities.

I echo Caliente63's post. While your situation may be completely different from mine in that you are planning remote blower, I can relate that all this talk of "quieter on lower speeds" talk that advocates bigger blowers can often seem to miss question of HOW LOW CAN IT ACTUALLY GO? I have a Bluestar/Prestige hood, purchased 3 years ago. Very happy with hood. 36" hood over 30" Bluestar range. I elected to go with 1200 rather than 600 CFM motor, nominal upgchage, figured more is better...anywho...while I can attest to the usefullness of the full 1200 CFM at times of crisis during wok emergencies etc, 90% of time I seem to run hood on LOW...boiling tea kettle, just the oven on while we are at dinner table, one pan etc..... Of course, these low intensity stove use times are also the times when I would like to either hear myself talk at the dinner table or hear my background music or whatever. I certainly don't mind the fan nosie (I am on an 8" duct, somewhat undersized for full 1200 CFM but mostly I am never above half speed) when I am fully in action at the stove. But during the long cooking sessions when I want to listen to music or whatever as I go, and all I need is just the oven baking cakes, or one pot simmering or whatever, I found that even the LOWEST setting is just too much. So, I would seriously consider that issue. After 3 years of being upset with my hood on low, I had the idea that I could install some kind of switch to control the two motors separately. The Prestige/Bluestar hood achieves 1200 CFM by way of two identical motors. After discussion with Prestige and some research I just had my hood rewired to include a separate remote X10 controlled wall switch to control the second motor on or off. It is a night and day difference. Now for everyday tasks I use the hood on ONE motor on low. As soon as I want anything remotely intensive I flip the switch to get TWO motors on low. Then of course if any more is needed I can dial up to the full 1200 CFM....This works very well for the Prestige because the two motors are controlled by a single continuously variable switch. My estimate is that the LOWEST setting of this switch is ca. 1/4 to 1/3 of full throttle. So by installing the secondary control switch essentially I have dialed down my lowest setting from ca. 300 - 400 CFM to about half that. If I had the choice again I would go remote blower. That not being possible I am now VERY happy with current setup However, I was at the point of ripping out my second fan completely due to noise on the low setting which was spoiling my time in the kitchen, so if I were stuck with small duct and no remote option I would seriously look into the controllability of a large CFM motor before taking it over a smaller unit that would be adequate for the job. Do you have the stainless steel work surface in one area? You must with a 5 burner. That would make the burner surface around 42" wide. In general, I don't understand why (except for looks) installing a hood over just the surface that contains burners wouldn't be ok? This range, tho, I'm thinking they spec non-combustible materials for the wall behind it. They are kinda peculiar about installation. So I think I'd call the dealer and ask about that. Plus a fair number of localities ban range installations in front of a window. Here we can call the building inspectors for an opinion in advance - maybe you can too? I'd do it and ask about both things before I got too committed (i.e. fell in love) with the layout.

I am a little confused as to how hood aperture can be so relevant. Say you have a 36" range....its 24" deep. If you have a hood of the same size mounted 36" above it...you have 18 cubic feet of air between the stovetop and the hood. At 900CFM you're removing 15 cubic feet of air per second. So in the first second your blower is running (you can assume it was already on for a few minutes before the test to get up to speed and have air pressures balance out etc), it removes 83% of the air over the range. During the second second, it does this again, which means that in that second, it is replacing 15 cubic feet of air under the hood, with 15 cubic feet of air surrounding the hood/range column (that is to say, the column of air between the top of the stove and bottom of rangetop. In many configurations (mine included) the fan is boxed in my cabinets a little bit on either side, and the wall behind it. Which means it only has 18' of surface area exposed, from which to suck the 15 cubic feet of air. Unless there is some guidance for how to calculate where in that surface area the air will be sucked from first....we could assume it will equally suck in 10" from all sides of the hood/stove column. Assuming a 12" pan on the front burner of the range, and food being fried or burned on the outer edge (aligned with the front edge of the rangetop), the 10 degree half-angle means that effluent rising 36" above the pan, is now 6" from the front of the range/hood...which is within the 10" of air which is being currently sucked into the hood. I could see where the additional width of a hood in this configuration could be beneficial, but in my mind that is only to prevent effluent from rising from a pan, hitting the bottom of the cabinet and getting it all greasy or being deflected out along the counter away from the hood making ventilation more difficult. I don't necessarily see how with that level of air movement (900CFM), an additional 3" of hood depth really changes the equation. If you had a much lower rate of air movement, then I could see the hood depth being more relevant. For example, if I had a 400CFM blower, I am only moving ~6.5 feet per minute...which in a hood 2'x3' means I am barely able to pull more than the 12" of air directly underneath my hood. The volume of air being extracted is so low in that scenario, I could see why a larger (deeper) hood would be substantially beneficial, because you dont have enough air movement, to be confident that you will pull out effluent that is in the air, ~35" above the rangetop and ~10" away from the front of the hood/range. It seems like the argument could be made though that with CFM movement that low, you would need an even deeper hood...like an impractical 32" deep hood 36" above the stove. I guess my unsubstantiated, uninformed hypothesis is that hood aperture is a more important consideration when the volume of air movement is lower (given a constant range surface area)....and that there is limited benefit to a 27" deep hood vs a 24" deep hood if your blower is powerful enough. So if you had a 36x24 hood mounted 36" over your 36x24 range...and you were trying to improve effectiveness of your ventilation system...it would be better to increase the CFM of your blower than to increase the depth of your hood by a few inches. Looking forward to your thoughts on this Kaseki and also, can you clarify for me the difference between capture and containment? I googled but only found documents referencing both together (blah blah capture and containment blah blah). Seems to me like capture and containment mean the same thing, and the words that should be use would be capture (or containment) and ventilation or something, where ventilation is the volume of air removed per unit of time.

Hi Megs1030, I have the Chagny 1400, which is like the Cluny except it has the added smaller oven (which gets used all the time for roasting veggies, etc.). I use the warming drawer almost everyday. It is great for keeping prepared foods warm, slow cooking, and Sous vide cooking of meats. I do not find the smaller ovens an issue. No, I do not bake cookies directly on the pasty sheets. Cookies and everything else bakes wonderful in the smaller ovens. I use the gas oven for roasting meats. Turkey (18 lbs) fit and roast beautifully. As for sliding items in and out of the ovens, that depends on the pan. If the ovens had the telescoping oven racks it would be easier, but the range has so many other great qualities that I do not mind not having telescoping racks. We all have different cooking styles, I would suggest you contact Art Culinaire. The company has excellent customer support. They are the most wonderful group to work with. They can put you in contact with a range owner, so that you can experience the range first hand. Which for me was great. Seeing the range in a kitchen, experiencing how to use it first hand, really help me make my decision to purchase. Good luck.

I think you should ask the supplier. Your hood should be designed specifically for your Lacanche. Dont attempt to decide yourself. Get expert advice. This is not something you want to get wrong!

And you have just sent me off sur une recherche d'un lacanche en France. Quelle surprise. They are significantly cheaper in France. Just 3950 euro (about 5000 dollars) for a 100cm cluny. Wow. Tempting. But my french isnt courament enough to be confident going there to buy....

Diplodicus, too bad you don't know anything about Lacanche or Art Culinaire the only authorized retailer/distributor only sells the range and not hoods. When you buy your Lacanche from a retailer in France you will have no warranty here in the US. Not a good move on such a purchase. These are hand made ranges and are subject to the need of fine tuning.

Hi ash2011. Thanks for info. But Er. I am not in US. I live a short ferry ride from France and no biggie to import from there for me. But as I say my French isn't really good enough to be sure I wasn't being done. And why the don't AC import the hoods. They are freely available here. (i was looking at one this week)

Lacanche produce an approx 5 ft (1500mm) hood which I presume is meant for your cooker. Look on www.lacanche.co.uk/products/extraction to view the lacanche hood thats supposed to go with your range. Maybe you can find one available to you that has the same spec.

Ash2011, how does the Elica ceiling hood work? The ceilings are 10'? That would be perfect to have it in the ceiling and not in front of the window. We just want 5 burners so maybe it would be okay to put the 48" hood over the burners only? I never use our hood but feel like it needs one? Maybe we do a backdraft and ceiling hood together? Thanks for your help. We have no pictures yet - they just started framing this past week!

Sorry. I didnt realise it was going in front of some windows. How about something like the Gaggenau AC 402 which is flush with the ceiling but provides great light and terrific ventilation. Now it is vvvvvvv pricey but I am sure there must be a cheaper alternative....

If Dippy's Gaggenau is available in the US that would be the solution your looking for. The Elica Cloud Nine isn't available in the US. You would need to go with one of the hoods that look like hanging lights or the downdraft(not my favorite).
