Comments (2)I know the range top from BS tends to be thicker than most other brands on the market for a Range Top, so make sure that the thickness of it would work for your setup. I want to say it is around 11" thick, but that is just from memory. The cook top is also thicker than most other brands of cook tops from what I recall as well, so again, check the specs out before you commit. I don't think they offer any of the platinum features on either of those, but I could be wrong on that too. I have the 36" range top, 6 burners, and love it. One of the favorite items in the kitchen after the remodel. Super easy to keep clean and love all the power. We love having the extra space the 6 burners offers and we are not big griddle people so we just have a good (old) cast iron griddle from the 1950's I got off ebay. Comments (56)Hi Everyone, We are upgrading our kitchen and I am interested in. 48 inch open burner stove. I am trying to decide between blue star and capital. I am wondering about evenness of the burners. I currently have a midrange GE stove and I cannot stand it because the burners heat unevenly. The rear half of the front left burner is significantly hotter than the front half. Is there a significant advantage to the star shaped burner vs capitals round burners with respect to evenness? I am also interested in how easy it is to control burner output. By this I mean how gradual are the burner attenuators programmed. On my current stove basically most of the control between high and low is actually between 2 and 3. From 3 to high there is not that much change in heat output. Also how low are all of the burners able to go. Any time I need to cook something on low do I have to move it to the summer burner or do all the burners get quite low? Last question is about how powerful is the griddle on the capital stove and do you find it particularly useful? Comments (4)I don't know enough about Capital to give you a fair answer. But I do agree with your dealer that that star shaped burners are something you can really get used to. They are great both for cast iron and for rolled steel; they are not quite as important for tri-ply pots. And I do love cooking on rolled steel, when it is properly seasoned. It is very responsive, but at the same time, it transmits heat to the food very nicely. And it is perfectly non-stick and very easy to take care of and to clean. I have an assortment of cheap Lodge carbon steel skillets that really shine when used on the Bluestar. This also is the reason, why we use our wok so much for all sorts of foods ... not just Asian stir frys. The 22k BTU burners have oil smoking within a mere 20s, when I use the wok on our Bluestar RNB range. I think, personally, that would be my strongest reason to get the Bluestar instead of the CC. I like that I don't need an extra wok insert for our round-bottom wok. But if you use different cookware, then those differences might not matter much to you. From all I hear, Capital makes great stoves. Finally, I'd be curious about how easy it is to clean either brand. I find that my Bluestar is super easy to keep clean.
